National Soup Month

January is National Soup Month. Don't really know how the celebration for soup actually originated, but it is a wonderful way to recognize a staple that has been consumed as a favorite for many years and hopefully for many years to come.
No one really knows how the dish originated, but it is known that people have been eating soup as far back as 6000 B.C. I believe as soon as human beings found out how to boil water, it would have been inevitable that this wonderful stuff actually came to exist.
From the earliest of records, soup and porridge-type dishes were prepared by many people who lived in antiquity. From Neolithic times, soup was consumed in the Mediterranean and with what we do know, Greeks used to sell soup as fast food on the street using ingredients such as peas,beans and lentils.
There are many different kinds of soups all around the world. These soups actually have been classified through the ages. For an example in France there is a system for classifying soups called The Escoffier , in Le Guide Culinaire (1902), provided a strict classification system to identify soups by different standards. Chefs today are not as strict as to classify their soups, but the classification of what a "soup" is or may be considered under the guidelines of soup (example puree, bisque, gumbo, chowder, etc) is still in place today.
One of the soup that has made many mothers and grandmothers testifying they can "cure the common cold" by has been that of chicken soup. And as you know you should listen to your mother. There have been some speculation and different theories that have come up throughout the days of if there is something in Chicken Soup that may help cure or help one feel better when they are sick with the cold or flu.
In the 12 the century, one physician by the name of Moses Maimonides actually prescribed chicken soup as a cold and asthma remedy during his time. Since then, the therapeutic properties of the soup have been studied and have baffled doctors for decades. There have been some other theories that doctors of today have concluded based upon their recent findings that may suggest that soup may have some healing properties.
One doctor by the name of Dr. Irwin Ziment, M.D. pulmonary specialist and professor at UCLA school of Medicine, stated that chicken soup may have similar properties that of modern cold medicines. Another doctor by the name of Stephen Rennard M.D., chief of pulmonary medicine at the University of Nebraska Medical Center in Omaha said that chicken soup acts helps because it acts as an anti-inflammatory agent by stopping inflammation produced around bronchial tubes that may cause a cough or congestion. Some other experts suggest that the steam the hot soup produces may help cold and flu victims in facilitating breathing and assistance with clearing congestion.
No matter way you slice it, seems that chicken soups (as well as other soups) contain hearty vegetables and fruits that can help us with staying healthy...period. So take advantage of this celebration. Whether you use a recipe from this site or remember the times when your mother made soup for you, it is nice to know that this tradition has taken place and has touched the hearts of many people for many years. Sweet Corn Soup 



1) Corn - 1

2) spring onion

3) vegetable stock

4) Tomato sauce - 5 tsp

5) cloves, cinnamon, cardamom - 1 each

6) pepper - 2 tsp

7) salt, sugar to taste

8) onion - 1/2

9) tomato - 1

10) green chilies - 4

To grind :

Grind the onion, tomato and green

Preparation

1) Add the required vegetable stock, add the ground paste

2) Now take a cloth and put the spices and make that into a small bag

3) Add the corn

4) Bring them to a boil, simmer for 20 minutes

5) Then add the sugar salt and pepper and the spring onion

6) Now add the tomato sauce

7) remove the vessel and remove the spice bag

8) serve it with a tsp of butter and fresh coriander leaves

3 tablespoons butter
3 leeks, chopped
2 onions, chopped
2 cloves garlic, minced
2 pounds chopped mushrooms
2 teaspoons dried savory
1/4 teaspoon dried oregano

1 bay leaf
salt to taste
ground black pepper to taste
10 leaves fresh spinach
