The Norwegian Global Salmon Success! Norway delivers about 800 000 metric tons of salmon to the world annually. Two factors, innovation and making production processes more effective, have made Norway world's leading producer of salmon.
In 2007, the annual production of farming salmon was 784 000 metric tons. Norway represents about 40 per cent of the global salmon production. The salmon farming industry is today the third largest export industry in Norway, coming after petrol and metal.
- It is during the last 25-30 years that farmed salmon has claimed the unique position nationally and globally. It started on a small scale, early in 1970s, with small fisheries, simply run, on the West coast, where the climate is beneficial, with for instance good water temperatures. The salmon grows more the warmer the water is, but the growth is not at all exclusively down to climate, says Kristin Helen Roll, associate professor at the University of Stavanger.
She presented her thesis, Productivity and Efficiency in the Norwegian Salmon Farming Industry, at the University of Stavanger this spring.
The researcher points out that salmon farming is an effective way of producing protein. To produce 1 kg of salmon takes a lot less feed than what it takes to produce 1 kg of chicken meat. That is one of the reasons why salmon is so sought after as a source of protein in the world. Salmon production and other fish farming therefore has the potential to be one of the most important ways of producing food in the future.

The fish/fisheryThe Atlantic salmon is an anadromous fish, which means it migrates into freshwater to spawn, but otherwise lives in the sea. After two to five years in a river, the salmon fry undergoes a change, known as smoltification, rendering it able to live in saltwater. Once the salmon fry has become a smolt, it leaves the river and migrates out to sea. After two to four years, the fish is fully matured and starts the migration back to its native river to spawn.
Nowadays, fishing wild salmon is limited for the most part to sports anglers.
Fish farming
Norway has been a pioneering nation in the development of salmon farming, and since the breakthrough with sea-based farming in the 1970s, it has kept its position as the world's leading producer of Atlantic salmon.
As a coastal trade and export industry, the salmon industry has been extremely important for Norway. As a result of the tremendous growth in production, which picked up speed significantly in the 1980s, the salmon industry currently accounts for about 50 per cent (2008) of the total export value of Norwegian fish products.
Use
Atlantic salmon is sold fresh or frozen in slices, fi llets or as whole fish. Salmon fillets can also be cured, cold-smoked and hot-smoked. Fresh salmon can be used raw in sashimi and sushi. It can be poached, fried or grilled and is very well-suited to stir-fry and casserole dishes. Smoked salmon can be served as a sandwich filling or in salads, with pasta and in many other combinations.

Nutritional content
In terms of nutritional value, farmed salmon is an excellent product. It contains plenty of omega-3 fatty acids and is rich in the fatsoluble vitamins A and D. Omega-3 fatty acids are important for various cells in the body; they have a beneficial effect on heart and/or circulatory diseases and on bolstering our immunological defences.
