Ten Yummy Breakfasts for Back To School

Breakfast Is Important!
Children don't equate nutrition with taste. They don't care as long as it taste good to them
I have put together ten different breakfast to serve you child before they go off to school.
These are nutritious and tasty meals. Your children should love them.
Number 1
Sunrise Shakes
1 cup fresh-squeezed orange juice
1/4 cup pure cranberry juice
1/4cup water
1 cup yogurt
1 tablespoon maple syrup (or to taste)
In a blender, blend all ingredients until well combined. Pour shake into two glasses and enjoy.
Number 2
Granola or breakfast bars. They are quick and can be eaten on the way to school. They are nutritious and have lots of energy to keep a child going.

Muffins: You can make them ahead of time, or buy them. Freeze them and the night before thaw them out for your children's breakfast. Serve with fruit and a glass of milk.
Apple Yogurt Muffin
4 apples;
2 1/2 cups
sifted flour;
1 cup sugar;
1 1/2 tsp baking powder;
1 tsp baking soda;
1 tsp cinnamon;
1 tsp nutmeg;
1/2 tsp salt;
2 cups plain yogurt;
2 eggs, beaten;
1/2 cup butter or margarine;
2 tsp grated lemon rind;
1/4 cup sugar
Preheat oven to 400°. Peel and dice apples. In a large bowl, combine flour, sugar, baking powder, soda, cinnamon, nutmeg and salt.
In a small bowl, stir yogurt until creamy, and then add beaten egg. Add melted butter (or margarine) and grated lemon rind. Pour into flour mixture and stir until mixed.
Gently fold in apples. Spoon into greased muffin tins until 2/3 full. Combine sugar with about 2 tsp of cinnamon and sprinkle over unbaked muffins.
Reduce the oven heat to 375° and bake 20 to 25 minutes, until golden brown. Makes 14 - 18 muffins.

Scrambled eggs with ham or bacon and a Vegetable mixed in. These are good and healthy. They provide energy to keep your children going. Add a piece of toast and juice.

The old stand by: Oatmeal. You can make it the old fashioned way or you can buy the instant oatmeal. usually the instant has flavorings and fruit added.

Breakfast sandwich. For the bread you can use biscuits, hamburger buns, waffles, pancakes or anything else your imagination can come up with. You can add eggs, ham, bacon, cream cheese, chicken patty, veggies, jam and peanut butter. The choices are endless

Make a breakfast casserole with eggs, ham, cheese, and broccoli. Very nutritious and very good.
Breakfast Casserole

6 slices white bread, crusts removed, torn into small pieces
2 cups cooked, cubed ham
2 cups chopped frozen broccoli, thawed
4 ounces shredded sharp Cheddar cheese
1/2 cups milk
3 eggs, beaten
1/2 teaspoon salt
2 tablespoons melted butter
Preparation:
In a small baking dish, put enough of the bread pieces into the bottom of the pan to make a thin layer. Make a layer of ham, broccoli, and cheese. Whisk together milk, eggs, salt, and dry mustard. Pour over top. Toss remaining bread with butter; sprinkle over the top of the casserole. Bake at 325° for 45 minutes. Let cool for about 20 minutes; cut into squares. Serves about 6.

French Toast
French toast is so easy to make. Scramble some eggs and dip bread into it and fry. Great when served with fruit or juice. You can also add cinnamon and sugar to make it taste sweeter. Top with powdered sugar, syrup, butter or jelly

Quesadillas:
Use a flour tortilla and add cheese and eggs for a quick "to go" breakfast. Kids love them!

Cold Cereal
Any cereal is better than none, but try to stay away from the ones that have added sugar. Cereals like Cheerios, Total, Corn Flakes, or Kix are the best. I like Life Cereal and most kids do too.

Cheerios is a great cereal for kids. They love the taste and they are good for them. Add fruit to make it even tastier.

- That breakfast casserole looks wonderful. I have one child who does not like any of the traditional breakfast foods so he eats supper left overs. Tuna casserole is a favorite breakfst item for him.
