I like to introduce you all, food lovers from around the world to the wonderful Persian cuisine.
Persia, now known as Iran goes back some 6000 years. Iran is the eighteenth largest country in the world and as big as United Kingdom, Spain, France and Germany put together.
The vastness of the country and diversity of its nation is well reflected in its cuisine.
Persian recipes often include gourmet foods (Khoresh) of chicken, Red meat or fish which are accompanied by rice dishes or freshly baked breads. Fresh fruits and vegetables are served with almost every meal either raw or pickled. Diary foods are part of every day diet, cheese and butter eaten during breakfast while natural yogurt is taken with almost every lunch or dinner served.
Persian National Cuisine
Chelo Kabab, the national cuisine in Iran is simple but tasty.It's a dish of steaming white rice (Chelo) and barbecued meat which is often lamb but can be made from beef or chicken (Kabab). Main dish is accompanied by grilled plum tomatoes, a knob of butter, Sumac powder, raw onion slices and sour yogurt drink (Doogh). In north where I grow up, Chelo kabab also comes with smoked caviar and fresh walnuts on the side. Some Easy Persian Recipes
- Cucumber Yogurt ( Masto- khiar)
- Served as a starter or side dish, masto- khiar is prepared in minutes. Its cooling nature makes this dish perfect for those hot Summer days.
- Feta and Egg fry ( Panir-bereshteh)
- An every day dish from northern Iran, Panir bereshteh is cheap and easy to cook and is best served with fried fish and boiled rice.
- Spinach and Egg bake ( Nargesi)
- Cooked with fresh spinach leaves and onions, this summer dish is ready in minutes and best served hot with Greek yogurts.
- Fried aubergines with garlic and tomatoes ( Mirza ghasemi)
- An authentic northern dish, mirza ghasemi is a winner every time. People from all over the world from India to Australia have loved it and took the recipe to cook it at home.
- Saffron Rice
- This type of rice dish is served most days as part of the main course. Delicately cooked white rice with butter and saffron tastes good but smells even better.
- Halva
- This is the best known Persian dessert made of flour, sugar and rosewater. Halva is famous for its intense sweetness and aromatic flavours.
