Best Part of the Meal - Quick and Easy Desserts

Many people say the best part of the meal is the dessert. Ina Garten, the Barefoot Contessa, says your guests will forget what the meal was but never the dessert.

After a wonderful meal with good friends and good food, you sit back ready to relax and nothing goes better with this time of the meal than dessert. Something yummmy that will be remembered.

But you also don't want to spend days preparing the dessert. Just something quick and easy, but spectacular.

This lens shows you three really quick and easy desserts. the last one is my favorite, but all of them are worth a try. The cheese cake is more traditional, but so good.

Chocolate Cherry Bark 

With a couple variations, give them all a try!

The first very delicious and simple dessert is called cherry chocolate bark. All you will need for this is a bag of semisweet or milk chocolate, chocolate chips and cherry flavored candy canes. That's it two ingredients. Now how is that for quick and easy.

Line a baking pan, 9 x 13, with aluminum foil or parchment paper, or wax paper.

Using a glass or ceramic microwave safe bowl, melt the chocolate chips in the microwave, thirty seconds, and then stir what is not quite melted into the melted ones until everything is smooth. You DO NOT want to burn the chocolate. Remember the sauce will be hot and will continue melting the rest of the chips.

Using a spatula, quickly spread the melted chocolate evenly in the prepared pan until the bottom of the pan is covered. Sprinkle the crushed candy evenly over the chocolate, gently patting the candy into the chocolate.

TIP: Use a clean spatula to pat the candy into the chocolate. It keeps it looking much cleaner. The first time I made this all my candy got covered with the dirty chocolate covered spatula. It tasted great, just didn't look as pretty.

Put the pan in the freezer for about half an hour to cool it completely. then turn it out of the pan onto your cutting board or more parchment paper and break it into bite size pieces and serve. You can also sprinkle your favorite nut onto the chocolate as well. Yum! so good.

Really helpful Tip

Since it is a nightmare to crush candy, I found this very quick and easy way to do it with out mess or a "sand storm" in your kitchen

Throw your candy into your food processor and then sift it with your strainer to remove the dust.

Very easy and clean way to get the job done.

Another Alternative to the Candy Version of Chocolate Cherry Bark 

There is an alternative to this chocolate cherry bark.

Double the chocolate chips and do everything the same but instead of cherry candy, cut into chunky pieces dried cherries. Stir into the chocolate and then spread out onto the prepared pan and put into freezer for about an hour. Then pour onto more parchment paper and break into bite size pieces. Very nice texture and great flavor. And EASY!

But What About All That Candy Dust?

Once you have finishing crushing the candy in your food processor and have sifted it, you are left with all that dust.

What to do?

Save it and sprinkle it on your next batch of sugar cookies!

Quick, Easy and Simple Cheesecake 

Even baked, you get the most delicious cheese cake in under 45 minutes.

A lot of folks just love cheesecake, basically any kind of cheesecake, but they are intimidated by the stories of difficulty that go along with fixing a cheesecake at home.

NONSENSE!

This cheesecake recipe is delicious and certainly not intimidating. You can make this at home tonight!

For one whole cheesecake /serves about 8 when cut

1 egg

1 cup sour cream or yogurt (It doesn't seem to make any difference in flavor whichever you choose)

1 pakage of cream cheese (I prefer the philly brand)

1/2 cup sugar

1 tbsp lemon juice or or 1/4 tbsp of vanilla extract (I like the lemon juice, it keeps it fresh tasting, but the vanilla is good too. Try both!!)

1 pie /graham crust (you can buy already made/frozen )

preheat oven to 400 degrees

take all of the ingredients except the pie crust and cream it together until smooth
Pour it in the pie crust and bake for 30 minutes until springs back when touched in the middle or toothpick comes out clean

So simple! So delicious.

And don't forget to top it with fresh blueberries, or cherry sauce or whatever suits your fancy. The easiest is to just get a can of pie filling, and spoon it over the top. Just wonderful !!

But there is something very special about baked cheesecake.

It doesn't have to be a big drawn out ordeal.

Some More Quick and Easy Recipes 

Chocolate Peppermint Bark 

Still want more chocolate desserts? Well here is another and this one is called Peppermint Bark. This is very similar to the cherry chocolate bark and the only difference is that you will be adding peppermint candies and white chocolate to the recipe.

You start by lightly greasing a 9x13 inch pan and covering it with waxed paper, smoothing out wrinkles then setting it aside.

For this recipe, take two bags of semisweet or milk chocolate or dark chocolate, chocolate chips. Melt in the microwave for about 45 seconds and then remove and allowing the heat of the melted chocolate to continue melting the remaining chips, stir until smooth.

Pour into the prepared pan, smooth it out to the edges.

Place in the freezer for about 30 minutes

While this is cooling, get your peppermint candies ready. Just like in the very first recipe, crush them in your food processor and sift out the dust and set aside.

Next melt, in the same way two bags of white chocolate or vanilla chips, using the same technique as above and stir until smooth and then pour over the now cooled chocolate mixture, spreading it over the top of the chocolate.

Now sprinkle the peppermint candy pieces over the white or vanilla chocolate and gently pat them into the top chocolate with a clean spatula.

Return to the freezer for 30-60 minutes, turn onto a piece of parchment paper, and break into bite size pieces.

This is a very beautiful dessert and really fun to eat, It is delicious.

Variations:

Sprinkle your nut of choice into the dark chocolate lower layer before putting the white chocolate layer on top. Lots of texture and flavor.

Also you can try 1 tsp of peppermint extract in your chocolate as well for an extra kick.
