Creating a Raw Vegan Kitchen in a Cooked Food World!
In the midst of your oven, cook-top, microwave and toaster oven, where do you find room for you dehydrator, food processor, vita-mix, spiralizer and trays of wheat grass?
What do you really need in a raw food kitchen? What is just a nice-to-have?
These are questions I asked when I made the commitment to go raw. Perhaps you can get some ideas from this article.
If I Had My Choice, and Lived in a Perfect World...
I'd start from scratch! And build the kitchen my way.
A raw kitchen uses a lot of jars, bowls, knives and spatulas! I am, on a daily basis, either processing, germinating or sprouting, blending or dehydrating something, occasionally doing all of these on the same day!
Here are my requirements for food prep, listed as must haves, and things that would make life easier, but can be done without, listed as like to haves.
Must Have Items
These are the things that I use nearly every day!
Excalibur is one of the finest dehydrators made. It is the only machine with the unique ParaFlexx Horizontal Airflow Drying System which provides an eficient and quick way to dehydrate food. (This dehydrator allows you to control the temperature, so as not to go over 105 degrees, and has enough trays that you can make a lot of crackers or bread to store! LOVE IT!)

Vita-Mix CIA Professional Series Blender - Platinum
Durable components ensure trustworthy performance and supreme reliability whether blending fruits, vegetables or ice. (This, IMHO, is the Cadillac of blenders! Big and tough, and worth the extra coin!)

Omega Induction Juicer Model 9000
Juicing is easy with Omega's Model 9000. Its efficient and durable 1/3 HP General Electric induction motor provides quality results. (Everyone I know recommends the Champion Juicer, but I have destroyed 3 Champions in a very short time! The Omega is my personal favorite juicer!)

Cuisinart Custom 14 Cup Food Processor Brushed Stainless Steel
Big enough to process plenty of ingredients, and sized for exceptionally easy handling. Trademark features like the wide, one-piece feed tube and accessories for virtually any processing task. (My Cuisinart is 17 years old and gets a workout several times a week! I just love this old workhorse! )

Nice to Have!
These are helpful gadgets that you CAN live without, but would appreciate if you had them!

Joyce Chen 9.5-in. Saladacco Spiral Slicer
Create Asian style salads and dramatic vegetable garnishes with Joyce Chen's Spiral Slicer. One setting makes paper-thin slices while the other produces clouds of spaghetti-like strands. It also makes julienne strips and half rounds for a variety of dishes. The slicer, with its stainless steel blades, is dishwasher safe.
