There are now three kinds of "remastered Beatles" available...
With the release of The Beatles USB on December 8, 2009 there will be three choices available for those music fiends who want to get their remastered Beatles fix taken care of:
1. The Beatles Remastered Stereo Box Set
The Beatles Remastered Stereo Box Set
The Beatles Remastered Stereo Box Set includes every UK studio album from 1962 through 1970 along with 1967's Magical Mystery Tour which was originally released as an EP in the UK but as an LP in the US. The LP version of it became very popular and was eventually released in the UK as well and has become considered a part of The Beatles official catalog.
Along with those studio albums is a double disc non-album songs compilation titled Past Masters which contains remastered stereo versions of all of The Beatles songs that were released from 1962 through 1970 but never included on one of the aforementioned studio albums. This includes such huge hits as "I Want to Hold Your Hand," "We Can Work It Out," and "Hey Jude" along with great B-sides like "Rain" and "The Inner Light," &"This Boy."
Along with those studio albums is a double disc non-album songs compilation titled Past Masters which contains remastered stereo versions of all of The Beatles songs that were released from 1962 through 1970 but never included on one of the aforementioned studio albums. The Beatles Remastered Mono Box Set
The Beatles Remastered Mono Box Set contains the original mono mixes of all of The Beatles songs that were originally mixed in mono (which all of them through The White Album.) This is the first time that these mono mixes have been available on CD.
Some may not understand the interest in hearing this music in mono. One needs to understand the context of The Beatles recordings to get it. Back in the 1960s mono was king. It was the main format that people listened to music in so it's no surprised that it was these mono mixes that the band themselves was focused on. Because of this many feel that these mono mixes are the "real" versions of The Beatles albums up through around Magical Mystery Tour.

The Beatles USB is the digital version of The Beatles in Stereo Box Set.
It includes 320kbps mp3s and 44kHz/24bit better than CD quality FLAC files.
The mp3s will be of most interest to most fans because they'll love being able to easily put The Beatles music on their iPods (or other mp3 players) but for audiophiles it's the 24bit FLAC files that are most interesting. These files represent the current peak in audio quality for The Beatles music (unless/until it comes out in 96/24 or even 192/24 on DVD and/or Blu-Ray.)
