That was about 30 years ago and I still think about her... such a sweetheart! :) Good heavens... 30 years ago??

I'm thinking about rice pudding again today and was wondering what "extras" you might put into YOUR rice pudding. When you think about it, the sky is the limit! There is a chance that no two desserts would ever need to be the same!
Basic Rice Pudding
1/3 cup of long or short grain white rice
1/8 teaspoon salt
1 egg
1/4 cup brown sugar (loosely packed)
1 teaspoon of pure vanilla extract
1/4 teaspoon of ground cinnamon (optional)
1/3 cup raisins
1. Combine the milk, a pinch of salt and the rice in medium sized pot and bring to a boil. The minute this happens, reduce the heat to low and continue simmering until the rice is tender. The rice has a tendency to stick to the bottom, so stir every couple of minutes to prevent it from happening.
2. In a separate bowl, combine the egg and the sugar and whisk together until foamy. Spoon in a cup of the unflavored rice pudding into the egg mixture bowl a little at a time. This prevents the egg from cooking prematurely and beat continuously.
3. Pour egg/rice mixture into the pot and cook over LOW heat until the pudding begins to thicken.
4. Stir in vanilla and raisins and if you are a fan of cinnamon, you can add it as well.
The Islands Rice Pudding
1/2 cup white rice (long grain)2 cups water
1/2 teaspoon salt
3 cinnamon sticks
1 10-ounce can evaporated milk
1 cup sugar
1 teaspoon vanilla extract
ground cinnamon for garnish
ground nutmeg
Directions:
1. Over medium heat, cook the first 4 ingredients for 15 minutes. If you don't notice a change in the appearance of the rice, keep cooking.
2. Now add the evaporated milk and sugar. Yes, I know... evaporated milk isn't my favourite but that's what they use. (*Don't order Rice Pudding in Martinique if you don't like evaporated milk)
3. Turn down the heat and continue cooking until the texture becomes creamy.
4. At this point, you can remove the pot from the stove. Retrieve the cinnamon sticks and stir in the vanilla.
5. Spoon into a pretty serving bowl and chill until serving time.
6. Dust with cinnamon and nutmeg

Baked Rice Pudding
3 eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon grated lemon rind
1/2 cup raisins
3 1/2 cups milk
sprinkle of nutmeg or cinnamon
Details:
This is one of those everything goes into one bowl, mixed and then poured into a prepared baking dish. (Spray it first with Pam)
2. Sprinkle with a little nutmeg or cinnamon and then sit baking dish in a pan of hot water and bake in a slow oven at 300 degrees. It should take about an hour and a half.
3. Remove from oven and insert a knife into the center. It should come out clean.
Doesn't get much easier than that.
