    Great lens! I adore roasted red peppers. I featured this lens in my lens 'The Very Best Artichoke Recipes'. One of my recipes calls for roasted red peppers and homemade is best.

    Mmmmm, you just can't go wrong with roasted peppers! Bizarrely, though I make stuffed peppers all the time, I had *no* idea there were pans made to hold them so they don't slouch, spill, topple, etc... I'd never even thought to look for such a thing! Handy!!

    I love them on cheesesteaks or sausage sandwiches. Roasting them certainly gives them a much better flavor than "jarred" peppers. Has anyone tried a pepper and egg sandwich? Try it out with roasted peppers.

    There is an easier way - cut the peppers open first before putting them in the oven so you don't have to keep on turning them. http://testerfoodblog.wordpress.com/2012/01/30/how-to-roast-red-peppers/

    I love red peppers, so I read this with great interest. Andrea Chesman's cookbook sounds great - definitely on my wish list. I like the idea of being able to make a few things - like a quiche or a lo-men, and just using whatever vegetables are there.

    In ajvar, traditional Serbian side dish we prepare each year in large quantities and preserve in jars, along with homemade pickles, jams, conserves and marmalades. Beautiful lens, with excellent instructions for roasting peppers.

    The last time I roasted red peppers, I did it on my gas range, but now that I'm on oxygen 24/7, I think I will try your oven roasting method. It sounds a lot safer for me, haha! Thanks for all these methods and ways of using red peppers. I like the hot ones too, so this will work just fine for both.

    Hmmm, what a treat. Where I live we often roast them just about this time of the year, when farmer markets are full of them. They're mostly prepared as a salad, with just a little oil and vinegar and a bit of fresh garlic. I even deep freeze them in portions and then have quick roasted red pepper salad whenever I feel like it :) Great lens!

    I''m sorry. I think you misunderstood. This page is called How to roast red peppers and the first sentence says How to roast red peppers for recipes. This is a page to teach people the different ways to roast fresh red peppers for use in recipes as opposed to using jarred red peppers.

    Love finding a page on roasted peppers. We love them so much, I always have to roast twice as many for the sneaky fingers (mine included and not so sneaky, just greedy) that can't wait to eat them. Favorite recipe: Homemade roasted pepper humus.

    I include roasted red peppers, (or yellow and orange) in many of my recipes for side dishes. Sometimes even in salads. When I say I grill them, I mean I use my grill pan. I don't like cooking outdoors. There are the bugs and the heat (in summer) that make it an uncomfortable way to prepare food. I like this lens on peppers as they are one of my favorite things. I've only discovered them in the last 15 years. Be well and happy. See you around the galaxy...

    Roasted red peppers are one of my favorite foods. I serve with salad, with Mexican food, with mozzarella cheese and basil or oregano, or with hummus. OR as part of tomato soup, as described in my blueberries and red soup from TJ lens.
    Loved this lens (and now I'm hungry).

    I have roasted red peppers but it's been ages, and so these recipes will get me back into the swing of things. It's funny, though, how one doesn't lose the taste memory of a thing.

    Vertical roasting is the only way to roast peppers. Consistent, even heat that does not require turning the peppers means that, at high temperature, there is much less chance of burning. Also, because you can roast peppers several at a time on a rack you can do the job faster with a vertical pepper roaster. Learn more here: http://pepperroasters.com.

    I roast my red peppers on the grill, but first I soak them in a marinade of minced garlic, soy sauce, sugar, and lime. It's Delicious!

    Red peppers are absolutely delicious! I roasted over 300 of them in the fall, and froze them. Now, every time I want some, all I need to do is remember to take a package out of the freezer the night before.

    Thanks for your help. Today, and in a hurry (and living at least a half hour from the nearest store on New Year's Eve Day) I have to get ingredients for roasted red pepper soup. It calls for roasted red peppers (skinned) and my JOY OF COOKING does not seem to tell one how to do that - at least not in the extensive index. So for the first time ever I turned to GOOGLE and the question "How to roast red peppers". AMAZING. Clearly gives me various ways of roasting them. Now I can get going on the soup. Thank you.     Roasted peppers are the best. I roasted 300 of them this fall and froze them in small sized portions. now we can have roasted peppers year round.

    How can I bottle these and make them last most of the winter? Will metal tops on jars make a difference? Do they need to be steam bathed?

    To me there is nothing like red peppers coming off a grill. They are like candy!! I am not sure why they are sweeter than the other colors of pepper but I will take it.

    I have a glass top electric range. Can I roast (burn) pepper in an oven or do they have to be done on top of a gas stove?

    I roast mine directly on the stove until black, let stand in a strainer for 15 mintues, then remove all black skin. I then break apart gently and hand dry with paper towel. distribute on a large platter. drizzle fine olive oil and aged balsamic over the peppers, seasoned with some basil, salt, pepper and a dash of oregeno. Just before I add the topping I first slice mozzoralla cheese fine and lay over the peppers and then add olive, balsamic and spices. Let cool in ref for fifteen minutes and the easy part is chowing down with a nice bottle of red wine to compliment the peppers. I do not recook my peppers under the broiler as traditional stated. Enjyo
