Originally most salsas were variations of a standard recipes containing tomatoes, peppers, onions and a few spices. Today salsas come in a wide variety of gourmet, mild, fruit, hot, and fiery hot types.

You will find heat levels ranging from the mildest of mild to some great tasting medium salsas to fiery hot (burn your mouth) varieties made from fresh jalapeno and habanero peppers.

Fruit salsas now features a variety of pineapple, mango, peach, and even raspberry salsas. Many sites selling salsas contain recipes ideas for cooking with salsa.

Those in the Southwest distinguish between Salsa and Pico de Gallo. The main differences being that Pico de Gallo is usually larger chunks of the fresh ingredients and "basic table" salsa is usually cooked to reduce it to more of a "sauce with small chunks" consistency. A Great Basic Salsa Recipe 

BASIC SALSA
(Pico de Gallo)


I N G R E D I E N T S
5 large tomatoes -- chopped
1/2 cup green onions (or yellow onion) --chopped
1 1/2 tbsp. jalepeno (or to taste) -- veined, seeded and chopped**
1 tbsp. lime juice
1/2 small bunch cilantro -- chopped
Salt and pepper to taste

**CAUTION: The oil from pepper skins can burn your eyes or skin. Wear gloves or wash your hands after handling hot peppers.

I N S T R U C T I O N S
Combine all ingredients and refrigerate.

Makes: 3 cups

For a New Mexican Salsa replace the jalepeno chilis with green chilis.

Tip #1: Prepare Salsa a few hours to a day ahead. This gives the flavors a chance to "mingle".
Tip #2: I am not a big fan of cilantro so I lose most or all of the cilantro and add 1 minced garlic toe. Experiment with your own variations.

Another Great Salsa Recipe 

ANOTHER GREAT SALSA RECIPE:

I N G R E D I E N T S:

2 pounds tomatoes - peeled and chopped
1 yellow onion -- chopped
2 garlic toes -- chopped
2 tablespoons oil
4 jalepeno or serrano peppers (or to taste)veined, seeded and chopped**
1/2 cup cilantro -- chopped
Salt and pepper to taste

**CAUTION: The oil from pepper skins can burn your eyes or skin. Wear gloves or wash your hands after handling hot peppers.

I N S T R U C T I O N S:

Place garlic, tomatoes and chiles into a blender or food processor and blend to a chunky (not smooth) sauce.
Heat the oil in a heavy frying pan, add the onion and cook until it becomes translucent, about 3 minutes. Add the blended ingredients and cook over high heat until reduced by about half. Remove from heat, add cilantro and salt and pepper to taste. Makes: 2-3 cups

For a New Mexican Salsa replace the jalepeno or serrano chilis with green chilis.

Hint: Prepare Salsa dip a day ahead and store in the refrigerator. This gives the flavors a chance to "mingle".
