Sausage and Peppers Recipe
Depending on which part of the country you live in, you might call it a hero, sub or hoagie but whatever the name, you have to admit, nothing compares to an Authentic Italian Feast Sausage, Pepper, and Onion Sandwich.
Many moons ago, my husband's family owned an Italian restaurant in Little Italy, NYC and every year, in September, during the San Gennaro Feast, the whole family got together to help work the concession booth. My job was serving and keeping everything fresh and appetizing. My husband was in charge of the sausage and pepper sandwiches. Even the youngest family members were put to work, passing out straws and napkins. Working the feast took a lot of effort, hard work, and many long hours but the experience is one that I will never forget. The sights, sounds and excitement of the crowd were exhilarating to say the least and I've never had so much fun while working any place else.
Our feast days may be over but I can always bring back the great memories by preparing the Authentic Italian Sausage and Peppers Recipe that I learned in the heart of New York City.
Authentic Italian Feast Style- Sausage and Peppers Recipe
This easy to prepare recipe makes 4 average sized heros. Feeding a bunch? This recipe can be adjusted accordingly.
Ingredients
8 links Hot or Sweet Italian Sausage
2 Red Bell Peppers, discard seeds and slice into 3/4 inch strips
4 medium sized Yellow Onions, sliced into circular strips
2 to 3 tablespoons Extra Virgin Olive Oil
1 tablespoon Oregano
2 tablespoons Parsley
Salt and Black Pepper to taste
Italian Bread - enough to make 4 sandwiches
Directions
Although you can broil or pan fry them, authentic feast style sausages are always grilled outside in the open air until well browned. (The smell of the smoke is what draws the customers in.)
Place sliced peppers and onions into a saucepan over medium heat, top with oregano and parsley, sprinkle with salt and black pepper and then drizzle with your olive oil.
Be sure to stir this mixture every few minutes and continue to cook until the peppers and onions and soft but not mushy. (Approximately 20 minutes)
Slice your fresh Italian bread in half lengthwise and place 2 sausages into the fold. Top with enough sausage and peppers to fill. Go ahead and make them messy, they're more fun that way!
Serve and enjoy immediately.

I've been to the Feast of San Genaro twice, and I've had those pepper and sausage sandwiches. They're incredible! Homemade or locally made sausage does make a big difference, too. Great work! I think the feast should be coming up again really soon. Posted September 04, 2008 |
