- Hello Having been born and raised "up north" in N.J just across the water from N.Y I have not only been to the San Genaro Feast every year with my parents since I was a child but also every other Feast be it in N.J or N.Y. I had a Uncle who had a stand right at the Feast and he did use equal portions of red peppers, green peppers and onions. BUT you cannot have a great Italian sandwich without great Italian Bread. If you dont have a grill for this recipe I suggest the old Cast Iron Pan.

- Hi Mira,
Sorry but at the feast the pepper to onion ratio is different than you might want to make yourself at home. Peppers can be expensive. You are absolutely able to adjust this recipe to add more peppers if you like. I left the green pepper out because i prefer it with only the red but again, you are more than welcome to use the green mixed with red peppers.

- I think you left something out of the recipe - you list only two red peppers and no green. That's not enough peppers, plus you have green peppers pictured so clearly you used them. Otherwise, this is great.

- This lens had my mouth watering! I am a huge sausage fanatic and have had the sausages of just about every country you could think of. I have never had the sausages at the feast in NYC, but have had plenty of different kinds of Italian style sausage and peppers in New York and Chicago. Fabulously tasty lens.

- These look lovely! Agree with using good quality sausages, I get mine from the local farm shop, they are slightly more expensive but they do taste so much better.

- I've been to the Feast of San Genaro twice, and I've had those pepper and sausage sandwiches. They're incredible! Homemade or locally made sausage does make a big difference, too. Great work! I think the feast should be coming up again really soon.
