About Sercial
Sercial grapes are grown at high altitudes, and picked as late as September or October. This gives the Madeira a high acidity, which is normally reduced by long periods of aging.

About Madeira
The Fortified Wine
Despite being the drink in which the Declaration of Independence was traditionally toasted, and a favourite of George Washington and Thomas Jefferson, Madeira is not well known in the US today. It has wider support in the international community.

Madeira Jelly

This recipe produces a tart jelly for use with cheese and desserts
Ingredients
- 1 packet grape jelly cubes
- 200-300 ml madeira (to taste)
- garnish
Instructions
1) (Optional) prepare the madeira over a slow heat to reduce the alcohol.
2) Make the jelly up following the instructions on the packet. Hold back 1/3rd.
3) Mix the madeira in with the remaining 1/3rd.
4) When the jelly starts to set, stir in the remaining jelly to produce a swirled effect.
5) Leave to set.
When serving you can leave as-is or garnish with fruit peel or cream. Serve with fruit (grapes) or cheeses.
There is no reason to use grape jelly cubes and you could swap this with other flavours. However, sercial is extremly tart and you want smethig that can go with it. This produces a sharp jelly, not a sweet one, so you may want to warn people and try it first.
