Super Secret Skillet Almond Cookie-Cake Revealed
While living out West, Madam X (name changed) gave away many of her cookie-cakes to friends. We received one each Christmas. She shared her recipe with several people I knew, but made them swear to never to share it with anyone else.
When we were moving 2,000 miles away, I knew I'd no longer be a recepient of her holiday gifts, so I asked for the recipe. She told me no. I thought she was joking. Not so. She's give us the cake, but wouldn't share her recipe.
Over the years I tried various recipes. Then, I took food specialist Karen Johnson's challenge to heart and asked if she'd ever heard of baking a cookie-cake in a skillet. She responded immediately with something she'd found from the December 1997 issue of "Southern Living." It was close enough.
Tweeking that recipe, I now present to you Bici's Super-Secret Skillet Almond Cookie-Cake. Share it with whomever you wish!

Ingredients:
3/4 cup butter or margarine, melted
1-1/2 cups sugar
2 large eggs
1-1/2 cups all-purpose flour
1/8 teaspoon salt
1 teaspoon almond extract
1/2 cup sliced almonds
granulated sugar
1-1/2 cups sugar

granulated sugar
Iron Skillets
Directions:
Line bottom and sides of a 10-inch ovenproof skillet with heavy-duty aluminum foil, allowing edges to overhang 2 to 3 inches; press overhang against outside of skillet. Set aside.
Beat first 6 ingredients at medium speed with an electric mixer until blended. Press into prepared skillet; sprinkle with almonds and additional sugar.
Bake at 350 degrees for 35 minutes or until lightly browned. Cool in pan on wire a wire rack. Remove from skillet. Press foil over top to cover. Wrap again with clear plastic wrap. Top with a bow!

To Make Individual Cookies
After cooled, cut with a round cookie cutter.
Place each cookie in a paper muffin liner.
