Spaghetti, the long thin pasta made famous by the love scene in Disney's, Lady and the Tramp, is by far one of Americas favorite dishes. Depending on which sauce you choose to top it with, it can be simply delicious or exotically decadent. You decide!

Marinara Spaghetti Sauce Recipe
A simple fresh tomato sauce, also known as marinara sauce, is the perfect choice for a quick everyday meal.
Quick Marinara Spaghetti Sauce
Ingredients
2 (28oz) Cans of Tomatoes or about 6 Large (12 plum) Fresh Tomatoes
4 garlic cloves, minced
1/2 cup Olive oil
1 onion, chopped
5 or 6 whole leaves of fresh basil
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
salt and pepper, season to taste
Directions for Preparing Fresh Tomatoes for Sauce Making
To prepare tomatoes for sauce making, blanch them whole, by placing them into a pot of boiling water for about one minute or just until you see the skin begin to crack. Remove them from the water and when they are cool enough to handle, peel away the skin and discard. Cut the tomatoes in half, horizontally and squeeze out, then discard, seeds. Depending on how smooth you like your sauce you can either chop the tomato meat or puree it in a blender.

In a large sauce pot, over medium heat, brown the garlic in the olive oil until just golden in color. Add the chopped onion, prepared tomatoes, basil, cheese and seasonings. Bring to a quick boil and then reduce heat to low. Simmer for approximately 45 minutes. Serve over one pound cooked spaghetti.

Meat Spaghetti Sauce Recipe Variations
The above marinara spaghetti sauce can easily be made into a meat spaghetti sauce simply by adding some meat to it, and then cooking for at least another hour.
Try any of the following:
1 pound chopped meat, cooked until crumbly. (Drain, before adding to sauce
1 pound sauteed and drained meatballs
1 pound pork, cubed, cooked and drained
1 pound stew beef, cooked and drained
1 pound sweet or hot, Italian sausage, cooked and drained
Or for a real change of pace, 1 box of breakfast sausage, cooked and drained.

Seafood Spaghetti Sauce Recipe Variations
To change the above marinara spaghetti sauce into a delicious seafood spaghetti sauce simply add a ½ cup of bottled clam juice and your choice of raw shellfish.
Cook sauce for about an hour, adding the shellfish during the last 10 to 15 minutes of cook time.
Try adding any of the following:
1 pound of peeled and deveined shrimp
A dozen clams
2 pounds of mussels
1 lobster, cut up

Vegetable Spaghetti Sauce Recipe Variations
The taste of fresh tomato goes well with almost any other fresh vegetable so when it comes to making vegetable spaghetti sauce, the sky is the limit. Add your fresh vegetables about a half hour after starting sauce and let simmer for 30 minutes.
Try adding any of the following:
1 cup red or green fresh bell pepper, chopped
1 cup fresh mushrooms, sliced
1 cup zucchini, sliced, leave the skin on
1 cup eggplant, cubed
1 cup fresh peas
1 cup fresh green beans
Or use any combination of the above!
With so many choices, you can virtually serve spaghetti every night for a month and never serve the same meal twice.

- I like mine with a lot of meat. I usually use a pound or two of ground beef, and then let the sauce simmer for a few hours.

- I agree about the meatballs and Italian sausage. Great meal. Easy. Definitely one of my favorite meals...speaking of which, it's time to start supper.

- I'm with Julie... lots of garlic. I always make a vegetarian marinara, but anyone who wants meat gets Italian saugage or meatballs on the side. You can't go wrong with spaghetti. Nice lens!
