How to Cook Spaghetti Squash
-Cut your spaghetti squash in half, lengthwise.
-Remove and discard the seeds.
-Place your squash halves, cut-side down, on a baking dish.
-Use a fork to poke some holes in the squash skin.
-Bake at 350 degrees Fahrenheit for 30 to 40 minutes until tender.
-After it's done, remove the "spaghetti" (squash pulp) from its shell by using a fork to scrape and separate the spaghetti squash from the outer rind. The squash strands actually look like real spaghetti.
Serve hot with any of your favorite spaghetti sauce recipes.
One medium-sized (3 pounds) spaghetti squash will make about four servings.

Fried spaghetti squash is excellent as a side dish but can also be used as an interesting and delicious meatless main course. You don't have to follow these recipes religiously either. You can add or replace some of your own favorite vegetables for a nice change of pace. Just be sure to slice all ingredients thinly so that they will cook at the same speed.

Pan Fried Spaghetti Squash Recipe
Sometimes simple is best!
Ingredients
2 Tablespoons margarine (butter works too but may burn)
1 small onion, diced
2 cups cooked spaghetti squash
Salt and black pepper to taste.
Directions
Melt margarine in a large frying pan.
Add onion and sauté until tender and golden brown.
Add spaghetti squash and continue to sauté until golden brown.
Remove from heat and season with salt and black pepper.
Enjoy!

- When we first started veggie gardening, we threw in some spaghetti squash ... well, just for the heck of it. I was trying everything. And then we had a bumper crop of the stuff, and I had NO Idea what to do with. Thank goodness for my Victory Garden cookbook. But, you know, we never did try pan fried. Sounds great. And spaghetti squash is an excellent substitute for pasta, especially for those watching their carbs.

- I love spaghetti squash! we grow it in our garden. the little ones from the garden have a much nicer and sweet flavor than the giant tough skinned ones they sell at the store.
