How to make Spinach Rice - Palak Pulav - Indian Style

Healthy Spinach Rice - Green Rice

I don't like PopEye but I like Spinach. Not the boiled, tasteless way. I cook it in different ways. Here I want to tell you how to make Spinach Rice.

I use fresh spinach leaves.

For Spinach rice, we need:

Rice - 1 cup, wash and keep aside for 30 minutes.

Freshly Chopped/pureéd Spinach leaves - 1 cup

Onion chopped - 1(optional)

Fresh green peas - 1/2 cup

Green chilly - 1 chopped/ground to paste

Salt - to taste

Water - 2 cups.

Garam Masala(curry powder) - 1/2 tsp

Ginger/garlic paste - 1/2 tsp

Oil/butter - 2 tbsp

Preparation time: 10 minutes. Cooking time : 30 minutes. Serves : 4

In a deep pan, heat oil/butter. Add chopped onions and fry till transperant. add green chilli paste, ginger/garlic paste.  Saute for a minute.

Add garam masala, fry for a minute. Add water. When it starts boiling add rice, peas, spinach. Stir and cover. Cook for 10 minutes on low flame. Add salt and mix well. Cover and cook again till done. Do not let the rice become too soft. when it is almost done,  switch off the flame and leave it covered for 5 minutes.

Serve hot with vegetable curry, pickles, green salad, a cup of yoghurt. You can serve with any one or all of the accompaniments.

You can store this rice in the fridge for 2-3 days.  Just heat and eat.
