"A Bean Salad That Shouts? You Must Be Kidding.."...."No I'm not!"

Because of health issues (cholesterol) I had to learn to eat alternative forms of protein.
The bean, the lentil, the black eyed pea,the chick pea; all contain some protein and they are cholesterol free.
Serving the black eyed pea as a cold salad is not an ambitious project.
Deciding to add different textures and flavours from different food groups
that IS a completely different story.
So this entire lens is about the journey.

For those of you who are dietiing this bean salad is a good one to learn.
I have also put together a 10 day menu plan for weight loss that can work well in conjunction with some kind of exercise. As in all diets, if you have important issues; or if you are taking medication, you may want to check with your doctor first so that he can alter the plan to match your situation.

Different Textures Was What I Wanted In My Salad 

I wanted the recipe to delivered different textures besides the pea.
I wanted some crunch which I would get from finely chopped red onions.
But I also wanted a caramelized feeling which I decided would come
from chalottes, the long skinny green ones, tail included, which I paid
$2 at the market for 2 packs of 5. I cut them into pieces half an inch long
and I sauteed them for half an hour with a tablespoon of butter; and I seasoned them with pepper and salt; patiently stirring them until they were sweet and oh so tender. Almost sinful.
I let them cool.

You will need 4 cups of pre-cooked peas/beans/chick peas. 

My peas were already cooked. I had 4 cups of cooked peas. Of course you could use the product that you buy that are packed in the cans. Just rinse them carefully if you use that product. Taste them just incase. Sometimes over time the peas could become rancid.

Put all of your peas/beans/chick peas into a very large salad bowl (wood bowl preferred)

Red Onions Came Under My Knife 

Chop into tiny strips 2 large red onions. Every strip of onion should be no more than 1/8th of an inch thick and 1 inch long. The picture of the onions that you see, the length of the onions is good but the width is a bit too wide.
Make them thinner.

Add the red onions to the peas.

Take Out Your Mandoline 

Not the guitar..the other one..you're going to need it.

Take two fenouils and clean off the bottom making a straight flat surface.
Remove the leaves and put them aside.
Place the fenouil with flat surface facing the
blade side of the mandoline.
Adjust the slices so that they come out as thin and as transparent
as possible.
Be very focused on the task as you could easily cut your fingers
in a moment of distraction. Put on your phone head/ear set in case of calls
your hands will be safer and you will be comfortable.
When you finished with the fenouil you should have a nice pile.
If you want to snack , go ahead. Raw it is awesome.
Add the fenouil to the peas.

Skin Two Celery Sticks 

And use your mandoline again

You should have about one cup.
Add to the peas.

Chop into tiny pieces half a red bell pepper and half a yellow bell pepper 

If you have any green bell pepper lying around chop half of that too

The bell pepper gives refreshing sweet acidy to the overall flavour
of the salad.
Add to the peas.

Take out Your Pot 

Fill with enough water to boil 5 patatoes

Once your patatoes are boiled remove from the water
and in the sink under cool water remove the skin.
Once you have removed the skin, cut each patatoe in half.
Put patatoes in a plate and season with salt and add olive oil (about 4 tables spoons)
squeeze 1 wedge of lemon into the mixture and mix everything up.

Add to the peas once patatoes are chilled

So Far So Good..How About Some More Protein 

Fish based protein would work well, but you could add a diff produce fromthe same family, like chick peans, etc

Canned tuna could work well .
4 cans would do the trick.
Rince the tuna throroughly and double check
for rancidity.

Add to the peas, whether it is animal protein or another protein such as
the chick pea, etc..

But If You Like HoT Protein Here is An Example 

Chose any filet that can be barbecued

I suggest salmon, or tuna, or swordfish, or chilean bass.
You see the waythe fish is presented in the picture.
I would put the salad under the fish filet
and the fish filet would be slanted.

Oh Yes..about the seasoning..

Balsamic will be used with Olive Oil 

But before we do that we must add the echalottes

Use your hands to get into the bowl and mix everything up.
Add salt and pepper until you can tste the salt.

Clip half a cup of parsely leaves and add to the mixture.
Smell the aroma?

Now add a minimum 3/4-1 cup of extra virgin olive oil.
It may seem like alot but when you get down to it
it won't be that much.

Open your balsamic bottle and partially block the opening
as you allow drops to fall into the bowl.
Remix and retaste.

Repeat.
If there is not enough acidity to the overall flavour add
some more balsamic.
If the sweetness of the balsamic is too much for your taste, then use
red wine or white wine or better still apple cider or any other fruit
flavoured vinegar.

If there is not enough salt or pepper add according to your taste.

Add just a bit at a time
