It is best to store wine on its side, this will keep the cork moist and prevent air from penetrating into bottle. Chill white and sparking wines just before serving rather than storing them in the refrigerator.

Tips For Serving Wine

- Quickly chill wine by placing bottle in a bucket of ice water rather than in the freezer. Leave in ice water approximately 10 minutes. Chill sparkling wine in the refrigerator for a least four hours before serving. In a crunch, chill in ice water for 20 to 30 minutes.
- To decant bottle-aged wine easily, insert an unbleached coffee filter into neck of a glass pitcher and pour the wine filter into decanter.
- Fill wine glasses slightly less than half full, allowing room for wine to breath.
- A half bottle of wine per guest per hour is a safe estimate when entertaining.
- Always have non-alcoholic beverages available.

The key to preserving leftover wine is to prevent exposure to air. Air causes wine to age and the wine will oxidize and lose its freshness. Canisters of nitrogen can be sprayed into the bottle before re-corking to displace oxygen. Another device pumps air from bottle and seals it with rubber gasket. These devices help to preserve the wine longer than simply re-corking the bottle and storing them in the refrigerator. [TIP: Transfer leftover wine to smaller bottle to lessen to exposure to air.]
