Teatime is once again gaining popularity as many young mothers seek to establish this tradition with their children. Ofcouse, the sweetest part of these times together is the memories made, but here are a few recipes for some other sweet things you can serve with your tea.
Snicker Doodles
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/4 cups flour
2 teaspoons cream of tartar
1/4 teaspoon salt
1 teaspoon baking soda
Preheat oven to 400 degrees farenheit. Cream butter, shortening, and sugar. Add eggs and mix well. Combine dry ingredients in a separate bowl and blend into the egg mixture. Shape dough into 72 balls. Combine 2 tablespoons sugar and 2 teaspoons cinnamon. Roll balls in mixture. Place 2 inches apart on ungreased baking sheets. Bake for 8 to 10 minutes or until set. Immediately remove from baking sheets.
Teatime Toffees
3 oz. cream cheese
1/2 cup margarine
1 cup flour
Mix ingredients together. Chill one hour. Divide into 24 pieces and pat into mini muffin tins.
Filling:
1 cup brown sugar
1 tablespoon margarine
1 teaspoon vanilla
1 egg
3/4 cup chopped pecans or walnuts
Beat ingredients together, put into shells. Bake at 325 degrees farenheit for 25 minutes. Cool slightly before removing from pans.
Tea Bread
1/3 cup shortening
1 cup fruit of choice (*see list below)
2 eggs
1 3/4 cup flour
2 teaspoons chopped walnuts (optional)
1 teaspoon vanilla
1/4 teaspoon salt
Cream shortening and sugar, add eggs. Sift dry ingredients and add to sugar mixture. Mix well and add fruit. Pour into two greased mini loaf pans. Bake at 350 degrees farenheit for about an hour or until a toothpick inserted in the center comes out clean. Cool completely before slicing and buttering for serving.
*Fruits, choose one:
mashed bananas
applesauce (or use 1/2 diced apples and 1/2 applesauce)
grated green tomatoes
cranberry sauce
pumpkin (add 1 teaspoon pie spice and 1 tablespoon molassas)
You can also experiment with other fruits. These are just the ones I've tried.
Lemon Squares
1 cup margarine
2 cups flour
1/2 cup powdered sugar
Mix with a fork and press into a 9"X13" pan. Press halfway up the sides of the pan. Bake 20 minutes at 350 degrees farenheit or until light brown.
Filling:
4 eggs
2 cups sugar
2 Tablespoons flour
1 teaspoon baking powder
1 dash salt
6 Tablespoons lemon juice
Mix and pour over hot crust. Bake for 30 minutes at 350 degrees farenheit or until light brown. Let cool and sprinkle powdered sugar over the top. Cut into small squares.
Books For Little Girls
Gingerbread
1/2 cup brown sugar, packed
1 egg, beaten
1/4 cup molasses
1/4 cup honey
1 1/2 cups flour
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 teaspoon baking soda
1/2 cup boiling water
Cream shortening and sugar. Add beaten egg, molassas, and honey. Sift together dry ingredients. Add alternatly with boiling water. Mix well. Pour into greased 9"X13" pan. Bake at 350 degrees farenheit for 15 to 20 minutes. Serve warm.
Russian Tea Cakes
1/2 cup powdered sugar (plus additional for rolling teacakes in)
1 teaspoon vanilla
2 1/4 cups flour
1/4 teaspoon salt
3/4 cup finely chopped walnuts
Shape dough into fourty-eight 1-inch balls. Put on cookie sheets. Bake at 400 degrees farenheit for 10 to 12 minutes. Roll immediately in powdered sugar. Cool and roll in powdered sugar again.
Brown Sugar Shortbread
1/2 cup brown sugar, packed
2 1/4 cup flour
In a mixing bowl, cream butter and sugar. Gradually stir in flour. Turn onto a lightly floured surface and knead until smooth. Pat into a 1/3-inch thick rectangle. Cut into 2 inch squares. Bake at 350 degrees farenheit for 25 minutes or until bottom begins to brown. Cool for 5 minutes before removing from pans.
