The one time a year when most people really do try to think of things to appreciate in their own lives is Thanksgiving. Its too bad we don't spend more time all year round on this pursuit though. I always have my students write this essay around the holidays: Why You Should Be a Vegetarian, by Tom T. Turkey. With a gentle reminder to leave out any references to the gory parts (strickly from a turkey's point of view) I have gotten some really interesting essays.

I won't try to persuade you to give up your turkey and giblet gravy in favor "celebration roast" .However there are plenty of reasons to think ouside the box this holiday season.
Why not spend a little time researching what was eaten at the first Thanksgiving? You may be surprised to find turkey was not on the menu. (Neither was pumpkin pie, but there is no way I am giving that up!)
I know that during the holidays people tend to feel more stressed, I mean generous. Now would be a great time to find a way to help someone else. Maybe give them something to be grateful for. When I shop in the fall I try to remember to buy an extra can of green beans or pumpkin filling. Its just a little each time so it doesn't hurt my budget.

Ok, I admit it, I am a Vegetarian. I do have to cook a turkey for the family though. They have been unmoved by the Tom T. Turkey essays I bring home each season. Plus once I bought a "tofurkey" from Whole Foods and we almost had a revolt. Lets just say WHY????
I prefer to skip the analogs (fancy name for fake meat) and stick to the side dishes and save lots of room for dessert.

Lots of people will be going hungry this Thanksgiving. Please consider ways you can make a difference by donating money or goods to your local charity or foodbank. Most schools try to put something together for needy families, so you could try contacting your local school's guidance counselor. Here in Florida we have the Share Florida Food Network. - Of all the places we see in the news lately Haiti really touches my heart. The children of Haiti are suffering so much. This probably gets to me even more because 2 of my kids are adopted from Haitian birthmoms.
