Beef brisket is a braising favorite, but rarely seen used in tomato pasta sauces. It makes a deeply flavored sauce, heavy with that special beefiness that only a brisket can bring..

Add the cherry tomatoes, shallots, garlic, and extra-virgin olive oil to a blender and puree until very smooth. Reserve.


Brown the beef brisket in olive oil, in a heavy Dutch oven or pot, over high heat. Add the chicken broth, salt, bay leaf, rosemary, tomato sauce, tomato paste, cream, and the cherry tomato mixture in the blender. Bring to a simmer, turn heat to very low, cover and cook for 2 hours, stirring occasionally. Uncover and continue to cook, stirring occasionally, for another 1 1/2 hours, or until the meat is soft and tender.

Season with salt and freshly ground black pepper to taste. Spice with pepper flakes if desired. Toss the sauce with the drained pasta, and serve with Parmesan cheese.

  • 1 pint small, sweet cherry tomatoes, stemmed and rinsed
  • 2 shallots, chopped
  • 4-6 cloves garlic
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon olive oil
  • 2 1/2 pounds beef brisket, cut in 1/2-inch cubes
  • 1 qt chicken broth
  • 1 teaspoon salt
  • 1 bay leaf
  • 1/4 teaspoon dried rosemary
  • 1 jar (28-oz) prepared tomato sauce
  • 2 tablespoons tomato paste
  • 1/4 cup cream
  • salt and fresh ground black pepper to taste
  • hot red pepper flakes and/or cayenne to taste
  • 1 pound penne pasta, cooked according to directions

Seared Halibut Steaks with Hot Bacon and Roma Bean Relish

This super-simple seared halibut recipe only has a few ingredients, and takes about 15 minutes start to finish, but the flavors are big, bold, and very harmonious. This seared halibut recipe can also be used for salmon steaks as well.


In a large, non-stick skillet, over medium heat, cook the bacon in the butter until cooked, but not yet crisp. Add the raw sliced beans to the pan, and continue cooking, stirring constantly until the beans are just tender, about 4 minutes. Remove the bacon and bean mixture to a strainer to drain, and place the pan back over the flame. There should be enough residual fat in the pan to cook the fish, but if not, add some more.

Season the halibut with salt and fresh ground black pepper. Sear for about 3-4 minutes per side, or until cooked to your liking. Remove the fish to warm plates and add the bacon and bean mixture back to the pan. Pour in the lemon juice, and cook for one minute to heat through. Taste for seasoning and adjust with salt and fresh ground black pepper.

Spoon the bacon and bean mixture over the halibut steaks and serve immediately. If desired, do a thin drizzle of hot sauce on the plate for color, and to spice things up a bit. (I used Sriracha here). Since it's on the side of the plate, the diner can use as much, or as little, as they like.

  1. 1 tablespoon butter
  2. 4 oz bacon, sliced in 1/4-inch pieces
  3. 8 oz Roma beans, or other fresh green beans, sliced into 1/8-inch pieces
  4. 4 (7-oz) halibut steaks
  5. salt and fresh ground black pepper to taste
  6. 2 tablespoons freshly squeezed lemon juice
  7. hot sauce, optional

  • 1 tbsp vegetable oil
