When The Beatles were recording their legendary albums in the 1960s, mono was the standard. Why? Because most people played back their albums with mono systems. It wasn't until the late '60s that stereo started to get taken seriously.
Because of this The Beatles (along with producer George Martin and engineers Norman Smith & Geoff Emerick) spent the majority of their time and energy on the mono mixes. These were the mixes that they worked on until they thought they sounded just right. On the other hand the stereo mixes were often tossed together very quickly without a whole lot of thought put into them. Many of them were actually pretty "experimental" (by today's standards) because stereo mixing was just a new thing and they were trying out a lot of mixing techniques that would never be used in popular music mixing today (such as putting the drums and/or vocals all the way to the left or right.)
