The Best Mexican Chili Dip Ever!!!

My Girlfriend Michelle's Kid Loving, Craving Quelling, Booty Kicking Mexican Chili Dip!
At work the day was coming to a close when I realized.. OMG how dumb can I be! I didn't take out a thing for dinner. My giant kids are going to be starving.. and there was NO WAY I was going to trudge to the supermarket to spend my pennies on unthawed meat when I had a freezer full of the rock hard frozen solid kind. Enter Super Michelle, dinner savior of all scatterbrained moms on a tight budget. "Kay, I have an idea you might like. I'm sure your kids would love it. Although it's not the healthiest option, I'm sure your kids would welcome a change from the normal baked meat and steamed veggies." She was right, heck I needed a break from it too! That night I made the dip and served it with tortilla chips and thus began a weekend family tradition. I hope you have the same success with this recipe as I did!
Lets get started!
Ingredients:* 2 cans of Hormel Chili (I've tried the cheap
stuff..eww.. buy Hormel)
* 2- 8oz boxes of Cream Cheese softened
* 1 Can of Green Chili Peppers or Jalapeno (you can
buy fresh peppers as well)
* 1 1/2 pounds of Pepper Jack Cheese shredded
* Lots of Tortilla Chips!
1. Preheat oven to 350°F.
2. Mash softened cream cheese onto the bottom of a 1 1/2 quart baking dish
3. Pour Hormel Chili on top of cream cheese.
4. Sprinkle mounds of shredded pepper jack cheese ontop of chili.
5. Strategically place chili peppers onto of shredded cheese.
6. Bake for 10-15 minutes or until cheese is bubbly.
7. Serve with tortilla chips and enjoy!
A little Mexican Dip Humor (or grossness take your pick)
After the dip is gone....
This dip is smooth and creamy going down. It's almost addictive! My sons and I scooped mounds of the creamy, cheesy mixture onto hordes of tortilla chips. Smiling and laughing as we munched and crunched on the spicy peppers. I even added salsa to mine! In some cases we add seasoned ground beef. Yummy! The beauty of this simple recipe is it requires little effort to make and it's extremely flexible. You can add whatever you want. The downside is....Who gets to the toilet first! Man.. It's great to be mom!!
