Las Vegas Organic Do-It-Yourself Options
OPTION 1: Buy a few organic food bars from Trader Joe's or Whole Foods. Or buy them in bulk from Amazon.com, which can ship directly to your hotel as well as your home or office. Perfect for long days sightseeing or attending a convention or trade show. WARNING: Don't leave them in your car on a hot day. They'll turn into pudding.
OPTION 2: Stay at a Suites Hotel, by the day or week. Stock your kitchen area with fresh organic produce and organic entrees. Cook on stove top or in microwave. (Personally, I avoid microwave ovens. If I drive, I bring my own Cuisinart toaster oven.)
WARNING about weight sensors in Las Vegas Strip hotel refrigerators. I haven't heard this happening at a Suites Hotel. But ask just to be sure.
OPTION 3: I also bring along a Tribest blender. Stock the room refrigerator with fresh organic fruits and vegetables, frozen organic berries, some Omega 3 oil. Trade Joe's has 64-oz bottles of organic juices: $3-$4 each. Blend fresh smoothies, protein drinks, green drinks.

Las Vegas Organic. Or not!
I list businesses only if I can find a specific mention of Organic on their website.Small Selection
Some businesses offer only a couple of organic items on their menu. Even then, organic options may not be available when you visit.
No restaurant can serve organic food, if it's not available to them from their distributors. And it's not cost-effective to carry a lot of organic food, if only a few customers request it.
So...to help you find organic food at a given resort or restaurant, I suggest using Google's SITE command to find all references to organic on their website.
It's not an ideal solution. But it's the best I could come up with.
Not Really Organic After All
Sometimes enthusiastic vendors use the term organic, when organic may not be completely accurate.
So...be alert and persistent. I suggest asking questions until you feel you know exactly what you're getting. Most people will explain exactly what they mean, if prodded a little by good questions.
Here's another perspective on the meaning of the Organic label attached to food.
