Mom's Vegetable Soup
RECIPE: Be Creative
Cabbage is the key
Fill a large soup pot half way up with water.
Add some beef soup bones
Two Large cans of peeled or crushed tomatoes
(May use an additional can of Rotelle tomatoes and chilies, if you want it spicy)
Cut up 3/4 of a small cabbage into chunks (much larger than for coleslaw)
Two Onions diced bite sized pieces
Four Carrots diced bite sized pieces
A cup or two of green beans cut into inch pieces ( can use fresh frozen)
A cup or two of white corn off the cob
4 large diced potatoes ( any kind)
Cut up zucchini, summer squash, broccoli and or okra, in any amount desired.
Salt, pepper, Rosemary, to taste.
Cook with a lid for several hours.
You can really put just about anything into it as long as you do not forget the tomatoes and the cabbage. Enjoy.

I also like a nice ladle to scoop up the soup when serving. Then while we're dreaming it is really nice to serve it in great large crockery soup bowls, to keep it steaming hot.

How to get kids to eat this soup
The village women were wary and told him they did not have any food. He thought for a minute and told them that was fine that he would just make a batch of stone soup if they would just lend him a pot of water. So he made a fire and they gave him a large pot of water which he proceeded to put on the fire. He made a big deal out of going into the woods to get the right stones and came back and put them carefully into the pot.
The women all kept their eyes on him from afar and could see him whistling and smiling while the water in the kettle started to simmer. One woman finally dame out of her house and went over to his fire and asked, "well how is the stone soup coming along?" The soldier said it looked like it was cooking up to be mighty fine but it would sure be better if he had a carrot. She said," Oh, I might have a carrot you could have" and went off to get one.While she was gone another woman came out and checked into the stone soup and she asked how it was coming along. The young soldier happily told her that it was turning out really great and she could taste it in a little bit but he told her that it would be perfect if only he had a head of cabbage. Hearing this she left to go find a cabbage she had been saving in her root cellar.
With the addition of the cabbage and the carrot the stone soup was beginning to smell pretty darn good and the other women came to see how stone soup could smell so good. And they ended up going into their pantries for that wilted celery or tomatoes they had canned last year. after a couple of hours every one was gathered around a perfectly delectable kettle of Stone Soup. The Women all murmured, as they ate the hardy soup, that it was truly a miracle .

Chicken Soup or Vegetable?
Of course I go for the Vegetable. I make the soup with beef soup bones so it is not vegetarian. But the bone marrow has a huge amount of magnesium which because of prevalence of processed foods may people have a magnesium deficiency. Besides that it is oh so good. Wait and see.
