Wine ( White ) Diamonds

We call them "White Diamonds"

You have grounds to send the wine back if there is any foreign matter in the bottle other than sediment. However ,you may come across certain white wines, and some reds, containing tiny crystals in the bottom of the bottle and adhering to the inside of the cork. They may look like shards of glass, but they are potassium trace crystals and are,in fact,a mark of quality.
In the trade we call them " White Diamonds".
They only exist in wines that have not been cold-stabilized to remove them before bottling. If you subject a fine white wine to a dramatic drop in temperature it will precipitate these crystals.
They are colourless and odourless and will not alter the taste of wine. In a word, they are completely harmless.
Their presence is a sign of "fine wine" because this circumstance will never occur in a wine that has been pasteurized and rapidly chilled before bottling .
This is a special wine!
Cheers

Great for wine kits.

Looking to take the edge of your wine?
Before starting your wine take 1 cup of concentrate out and place it in a sterilized bottle and store in fridge . At stabilization step (day 14) add back the cup of concentrate to the finished wine. This will remove the sharp taste.
Happy wine making.

How Long Should You Age Wine?

Knowing how long to age wines can seem difficult. There are many types of grapes, many methods of production, a great variety of storage conditions and an overwhelming number of personal preferences. Each of these factors has an impact on how long a wine should be held before drinking. In general, wines gain complexity and lose fruitiness as they age. Tannic red wines also mellow and become softer as they age. Once a wine reaches maturity, it will usually plateau before slowly going downhill. Different grapes make wines with different aging profiles. As an example, most Cabernet Sauvignons will age for longer periods than most Merlots.

Of all the wines produced, more than 90% are designed to be consumed within a couple of years after they are produced. Understand that it is just as possible to age a wine for too long a time as it is to age it for too little a time.

In general, more expensive wines are usually designed to become better with age. Most inexpensive wines do not benefit from aging.

An eight course pasta tasting menu with eight different wines with each course at a fabulous New York restaurant.

Didn't drive home that night and had to go on a diet for two weeks afterward but it was worth it!

I was first introduced to "real" wine about five years ago. My date wined and dined me at a beautiful Italian restaurant. It was the first (and only) $200 dollar meal I have ever experienced. I will never forget how wonderful the stuffed chicken breast was and how I fell in love with Desert wine that night. I have not since experienced that wine and have not been able to find anything like it. It was so smooth, wonderfully sweet, and very tasty. Like a princess in a fairy tale, I will never forget that night! -Wendy J. Roan :) Great topic!
