What race should i choose?

The race of your character is pretty important. The most widely used race is Undead but i myself would choose Tauren.

When your a Tauren you will get a bonus of 15 towards your herbalism skill so you will start at 16 instead of 1, also the skill cap is 15 points higher than other races.

1-100: Durotar

100-150: The Barrens

150-200: Arathi Highlands & Alterac Mountains

200-240: Tanaris

240 - 280: Swamp of Sorrows & Feralas

At this point journey to the Hinterlands. Enter the cave and find Ghost Mushrooms there.

280 - 300: Eastern Plaguelands

What should i do with the left over herbs?

Either sell in an auction house, better to upgrade your bags so you will have more room to gather.

Create another mule character and unload it all on them, make sure they have enough gold to send it back though.
