Delicious Cheese Grits

Ranked #11,400 in Food & Cooking, #202,471 overall

I say YEAH for grits, this morning!

Cheese grits are the perfect way to kick start a morning with a delicious, warming cereal breakfast. Add some toast and sausage and you are sure to arrive at kindergarten, school, or work full of energy and ready to go until lunch or beyond. This southern delicacy is the best hot cereal meal.

Getting it done for breakfast southern style

Things you'll need:
5 slices of cheese
3 Quart copper bottom boiler/saucepan
Salt
Stirring spoon
Jim Dandy Instant grits
Optional items Sausage or toast

Bring 5 cups of water to a brisk boil in the sauce pan with a teaspoon of salt.

Turn down heat and stir in smoothly 1-1/2 cups of grits. This is a critical step to be smooth in the stirring in. Ninety five percent of all lumpy grits happens at this point. Don't let it happen to you!

Turn up heat slightly to a slow boil and set timer for 7 minutes for cooking.

After 7 minutes, reduce heat and add 5 slices of good sliced cheese one slice at a time. Fold hot grits over each slice as added and continue until all are in the sauce pan. Slowly fold grits until all cheese is evenly distributed throught out the pan.

Allow the Cheese grits to sit for about 2 minutes before placing in the serving dish. Optional toast and bacon or sausage can be added at this point. Bon Apetite!

I only had grits once in my life...in a diner in New Mexico when I was stationed there many years ago. It just sort of laid there on the plate next to the ham and eggs looking up at me. Maybe if it'd had the personality of the grits you describe here, it wouldn't have been my one and only helping of grits!

I have to say I've never tried cheese in my grits -- I like them with a pat of butter, and a wee bit of maple syrup. Oh, and I could never give up my Cream of Wheat either!

I was raised in Alabama and Arkansas, so grits was a staple in my house. Creamy grits are so much better than the awful lumpy grits, and creamy cheese grits are so yummy. I just noticed I wrote grits 4 times, well, 5 time now. Great, now I want some grits, but all I have is oatmeal. (6 times)
