Making wine at home leads to lot of advantages. You can take control of as much as process as you want. It gives you the pleasure of taking control of every aspect of the process from growing, harvesting and then processing the grapes. Various decisions and factors have to be taken into consideration while making wine and each will have an impact on your final wine.

As you start preparing you very own homemade wine, you may consider a new batch of fruits to create your own wine with which you've never made wine before. For that certain fruit if you don't have a recipe then, you would be very tempted to create you own recipe. If you've already been making your own wines then creating your own recipe for your very own homemade wine would not be a problem as you would know that you'll need to add just some extra sugar and yeast based on your fruit. But there are certain precautions for you to take so that everything turns out well!

Decide To Use Fruits for Making Wine at Home or Will You Use the Entire Cluster?

The first decision that has to be taken when you decide to use fruits for making wine at home is whether you will use the entire cluster or de-stem the grapes. you will find a certain flavor and nuance in your wine if you use the whole cluster which is not present if you de-stem the grape. Some people call it as somewhat green and it may or may not be liked by you. Using the entire cluster a number of good and award winning wines are produced. If you don't like that flavor, then you can de-stem the grapes before you use them for your wine.

The next decision that has to be taken is on fermentation process which is a very important step. The fermentation can either be done in a tank or a barrel. Mostly making wine at home is done using a tank as it provides more control over the process because the sleeves on the tank provides the choice to either cool or heat the must. For instance, you may want the tanks to be cool in the beginning of the fermentation process to extract the color from the grape skins. Because of this, the wine is stabilized. A barrel can also be choosen, which is also a popular method for making wine at home, especially white wines. Using barrels give wine some character that might not be got from tank fermentation. It is up to you to make the choice and this decision has to be taken before producing the first batch.

How Do You Choose What Kind of Yeast for Winemaking at Home? 

Then you have to decide about the type of yeast that has to be used while making wine at home. The grapes picked straight from the vineyard actually have yeast on them. So there is no need to add yeast during fermentation. The natural yeast itself takes care of it. But it may cause struck fermentation where the fermentation stops. The yeasts that are created in the lab are more stable. But there is a feel that the yeast created in lab lack in flavor. The natural yeast can be prevented from struck fermentation by adding a yeast nutrient or energizer.

Then finally, you have to decide whether to filter the wine or not to filter while making wine at home. There are no rules that wine has to be filtered or not. The wine which is unfiltered has a great amount of richness, but one should be aware of the bacterial issues if the wine is not filtered. There is a cloudier appearance in the unfiltered wine than the filtered one.

    I have about a dozen grapevines, including a Merlot and a Cabernet Sauvignon. If I can beat the squirrels to the grapes, I may actually make my own wine someday. Very nice lens!
