    I use a similar coconut macaroon recipe to the first one on here. So darn good, and simple as can be. You can make them in one bowl, and pretty quickly. I enjoyed the Kermit "Lime in the Coconut."

    YUMMY! What's really funny is that as I'm reading this lens I'm eating Coconut Panna Cotta with crushed pineapple and almond praline. Great lens; I love the recipes you included.

    Your lens made me smile. I love coconut! And, in recent years research has been showing how beneficial pure, virgin and cold-pressed coconut oil is as well! :) I actually buy it by the gallon! (Ok... it does last a while!). I loved the YouTube videos that punctuate this lens too! AND... recipes for Coconut Cream Pie?     Glad to see someone else who is nuts about coconut! I got a great gift from an American friend this week: toasted coconut marshmallows and coconut Neapolitan candies. One of my favourite coconut recipes is for a banana chocolate cake topped with toasted coconut. Also love pina coladas. :::blessed:::

    Good stuff ... I'm quite familiar with coconut oil which is good for dry skin and has many heath benefits .

    I'm nuts about this lens. My fave cake as a child was a coconut cake made from hand grated ( by mom) coconut. Boy was it good! Thanks for the information about an under appreciated food.

    Nice lens...I can only get fresh coconuts where I live but am not skilled at cutting them...need to learn that this year since I've learned so much about how nutritious they are.

    I too like the fresh and cold coconut juice from the market, but it really has to be ice cold. I tried it warm once and it tastes completely different. I see some great ideas about coconut cream pies, maybe I'll give it a try ;)

    My family eats fresh coconut several times a week.

    You might like my coconut quiz lens. I've got one set of pictures on how they remove all the shell from the meat without hurting the meat with a machete, all so a set on using a machete to prepare a young coconut to drink the water.

    While I've never been crazy about macaroons, those two coconut pies up there had me drooling enough to pique my curiosity about possible medicinal uses (if any) or harmful effects (just in case I decided to whip up a pie). Apparently, there ARE medicinal uses. A quick Google search turned up a number of articles along these lines, including one review of a book entitled , "Coconut Cures," by Bruce Fife, ND (with a forward by an MD). Favoritng, starring and lensrolling this one to my Laftover food magnets lens.

    I have to confess that I know nothing about coconuts. Well not the real ones anyway that you have to deal with actually getting into them. I got one recently in my bag of organic food from my co op and had to read up on how to get into it! It was worth it though. Love the pictures!

    I love coconut, and have been drinking the water for a while now. Also I have been eating virgin cold pressed coconut oil in place of butter and I have a lot more energy than I used to, it also has helped my pain form rheumatoid arthritis. I highly recommend Dr Bruce Fife's book on coconuts, both the water and the oil.

    coconuts are very versatile. frozen buko salad and buko pie are my favorite coconut recipes. <"buko" is the Filipino word for coconut>.

    My Mom used to make macaroons all the time when we were kids and Dad's favorite dessert was Coconut Cream pie. I'm thinking that we must have had A LOT of coconut in our kitchen... Haven't thought of macaroons in years!

    Fantastic lens, 5*s! I've been selling Chef Keem's Famous Tres Leches Coconut Macaroons for the last 5 years at farmers markets and groceries around Austin, Texas. Here's my secret: I add a little cream and 2 Tablespoons of sour cream to the recipe you show above. And I use 28 ozs. (2 bags) of coconut flakes per can of condensed milk, and Mexican Vanilla. They sell faster than I can make them, sometimes.
