Acar

Acar is condiment most widely available in Indonesian restaurants everywhere. Basically acar is Indonesian term for pickle. It is possible that acar was influenced by Indian immigrants in southeast Asian countries. In Malaysia and Singapore acar known by name of achar(Hindi, Urdu). Acar is mostly served with main dishes such as mie goreng (stir-fried noodles), nasi goreng (fried rice), bakwan (vegetables fritters), spring rolls, sate (satay) or grilling foods, etc.

Here is easy acar recipe to whet appetite. Its 100% vegatarian dish, fresh, light, crunchy and easy to make.

Ingredients

2 cucumber, rinsed off and cut julienne
2 carrot, rinsed off and cut julienne
5 shallot, peel and cut as desired
8 chili paddy, slit open down one side
4 tablespoon sugar
1 teaspoon salt
1/2 cup white vinegar

Method

Put cucumber, carrot, chili paddy, salt, sugar and vinegar in glass jar. Stir all of the ingredients until sugar and salt dissolve. Cover the lid and store it the fridge. Acar will be ready to serve in a couple hours.

Tips

  • Use glass jar to prevent chemical reaction between vinegar with plastic container or other utensils.
  • Add addtional vegetables or fruits such as cabbage, pineapple, radish/daikon radish, jicama, sweet yam, etc.
  • Adjust your spicines level by adding or reducing sugar, salt or chili paddy. Acar should be slightly sour, sweet and hot.
  • For best result, prepare acar 2-3 days before consumption.
