Not just because I enjoy the flavor of a variety of aged cheeses but also because I am aware of the health benefits that this type of cheese brings.
Did you know that when cheese is aged naturally it is full of beneficial lactic acid bacteria? These lactic acid bacteria are the same family that most probiotics come from.
So instead of taking supplements, you could eat aged cheese and get many of the same health benefits.

This is a Wisconsin cheese that has been aged for over a year.
It has a sharp tasty flavor and feels buttery in the mouth.
Great for nibbling on its own, or try it with crackers, a sourdough bread, apple pie, or smoked salmon. And open a bottle of good wine too, of course!
Just remember that if you cook it you will destroy the good bacteria. It will still taste great but to get the full health benefits eat it "as is".

Fabulous flavor - intense nutty, butterscotch flavor.
This is a wonderful looking cheese as well - hard and grateable but creamy and delicious in the mouth. Imported from Holland - the home of good Gouda
Note - you get a wedge of cheese not the whole round - and unless you're are a Gouda lover of enormous appetite you should be grateful. The round weighs in at a button bursting 24 lbs!

Good News/Bad News
The good news is that all these wonderful and healthy cheeses can be bought online and shipped anywhere in the US.
The bad news is that due to their popularity occasionally they are sold out and you have to put your name on a waiting list to be alerted when they come in.
But, hey, aren't good things worth waiting for?

I'm not personally familiar with this cheese but when it is described as "... if I were forced to choose only one food to eat for the rest of my life, I'd probably choose this cheese!" how can you ignore it.
Look, I don't even know if it is aged although I suspect it must be to have such great flavors coming through. But if you can leave it in your fridge for a week or two it will be - won't it?
Unless you're like me and a good cheese doesn't last long in your kitchen!

- We are definitely cheese lovers in our house. Especially well-aged cheeses. Hubby brought a wedge of gouda home from Holland last time that is absolutely delicious.
