Recipe that will blow your guests away
I want to give you an idea of what I like to do with some of the seafood I get from Premium Alaska SeafoodBacon Wrapped Scallops
-pre-heat oven to 375
-put bacon on a rack resting in a cookie sheet. Cook the bacon until just before it is done. You don't want to cook it all the way in the oven because you will finish it in the pan around the scallops
-get the scallops out and pat them dry. Wrap 1 peice of bacon around each one securing with a toothpick
-preheat a saute pan over medium high heat with 2 tablespoons of oil and a tablespoon of butter
-when the pan is nice and hot gently place the bacon wrapped scallops in the pan. Resist the urge to touch them for about 45 seconds. You want them to get nice and caramelized
-Flip and repeat for the other side
-It is ideal to serve scallops, especially ones this fresh, medium rare in the center.
-When they are done arrange three on a plate and serve. Be prepared for the compliments.

Ginger Marinade for Grilled Salmon
If you have one whole fillet cut it down into 3 or 4 equal portions. Always leave the skin on as this protects and adds flavor to the fish as it grills.
-1 tsp chopped fresh ginger
-1 tsp garlic powder
-1/3 cup soy sauce
-1/3 cup fresh squeezed orange juice
-1/4 cup honey
-1 green onion, chopped fine
----mix the first five ingredients together and whisk until combined
----marinate the fillets in the sauce for no less than two hours, and no more than six.
----fire your grill up until you have a nice medium heat rolling. Brush the grat of your grill with vegetable oil so nothing sticks
----Place the fillets skin side down on the grill. Spoon some of the marinade sauce over the top while grilling. There is no need to flip the salmon as it is nicely protected by the skin. The salmon is done when it starts to flake apart nicely
----Take the rest of the marinade and put it in a pan over high heat and reduce it until it coats the back of a spoon
----Drizzle some of this sauce on the plate and put the fillet in the center and serve.
