When planning a meal at home or just choosing a wine at a restaurant you inevitably come to the question "which wine goes with this food?"

I like to turn this question around and ask

What food goes with this wine?

There are some general guidelines to follow, but the truth is there is no one correct answer to most food pairing questions. Some people see this a problem to worry about, but I see it as an opportunity to try new combinations. Wining and dining should be fun; I don't find following rules to be fun. However it is wise to play in the shallows before plunging in at the deep end.

There are lots of new varietal wines around.  Some of these wines are great, some are so-so, but all are works in progress.

You need to know about these varieties to keep up to date.  There is nothing more boring than someone who has seen the movie "Sideways" and has become fixated on Pinot Noir.  Life is too short to waste on boring wine.

So there are hundreds, if not thousands of wine varieties to try.  And all of them have a particular affinity to food.

Learn by doing. So get yourself a bottle of different wine, get some recipes from albzin and get cooking, eating and drinking.

Is red wine really good for you? 

The red wine diet and health

Roger Corder has written a book based on his research on the effects of Red Wine on the vascular system. He even discusses which varieties (especially Tannat and Malbec) contain the most polyphenols, the chemicals in wine that are good for you.

A few quirky wine food matches 

Think outside the square

  • Smelly, ripe cheeses go with sweet or aromatic wines, such as cool climate gewurztraminer
  • Artichokes are hard to match with wine but a strongly flavoured Sauvignon blanc can do the trick
  • Red wines are very good with Italian style seafood stews, especially if the sauce is dominated by tomatoes
  • Foie gras is traditionally eaten with Sauternes, but a good semisweet wine such as Monbazillac is also very good
  • Retzina is pine resin flavoured Greek wine that goes well with hot Indian food
