Do you like the pots you're cooking with?

Are you fed up with the non stick coating on your pots peeling off? Copper core cookware vs. stainless steel cookware 

what we found out

In copper core cookware there are 5 layers - a stainless steel exterior, a layer of aluminium, a layer of copper, another layer of aluminium and stainless steel again on the inside of the pot. Since copper and aluminium are the best conductors of heat, these layers of aluminium and copper are the key to the incredible performance of the copper core cookware. These layers are not only on the bottom of the pan, but in the sides too, which makes these pots superior in conducting heat throughout the food being cooked. Copper core cookware is usually a little heavier than other pots.

In stainless steel pots a base of aluminium or copper is needed to ensure even cooking. Because stainless steel alone is not a good conductor of heat, you need to make sure that the bottom is made of thick layers of aluminium or copper. Stainless steel looks nice and the pots are usually quite light.

But does it really work? 

what we found when we actually used it

When we first got our copper core cookware set, we were 1. suprized at how much heavier it was from our old set and 2. how efficient it was. Because the cookware is built to hold heat and distribute it more evenly, we found that we only needed to use a low to medium heat setting.

We were a bit dubious about the stainless steel fry pan and thought that everything would stick. We found that if you heated up the pan a bit, then added some oil, and then added what we wanted to cook, it didn't stick at all. Apparently the oil helps form a natural barrier that prevents food from sticking. When you add your food to the preheated pan, there should be a sizzling sound this tells you that the pan is the right temperature, if it makes a lound cracking sound, the pan is too hot and the food might stick and burn (we found removing the pan from the heat so it can cool a bit helped), and agian, medium to low heat is all you will need. After cooking if there are brown bits left on the pan, add a small amount of broth, wine or water, stir to loosen the bits and simmer to reduce it down to a wonderful flavourful gravy. We figured out pretty quickly what the best temperature to cook with was on our stove.

Another feature we found to be interesting was that all the All-Clad lines of cookware are oven safe to 500'F. Although we've never actually put a pot in the oven, it was nice to know that we could. Remember, that if you do put a pot in the oven, the handle will be hot, so use an oven mitt to take it out. On the stove the handles don't heat up, but the loop handles on the sides will get hot.

When we first got the copper core cookware, we would carefully wash each piece we used by hand and shine it up really nice. Even though all the cookware pieces are fully dishwash safe, we still like to wash them by hand. If food sticks or causes discoloration, wash the pot by hand using a mild abrasive cleanser like Vim and rinse thoroughly.

The only other thing about our new copper core cookware was that it was heavier than our old cookware. This took a bit of getting used to, but we figured it was good for our biceps. The larger pots have loop handles as well so you can lift the pot with two hands (be careful though as the loop handle does get hot).

Other than that, you can use what ever cooking utensil you like, wood, plastic or metal, it won't hurt the pot.

I must say though, we absolutely love the copper core cookware, and would never go back to anything else. it was an investment, but if we take care of it, we should be able to pass it on to our children

Very useful information...good job! I especially liked your tip for heating up the pan, then adding the oil and then the food. I'm going to try that. Besides being a pain in the neck, all that non-stick coating cannot possibly be healthy.
