History Of The Olive

The Olive (Olea europaea) is a species of small tree in the family Oleaceae.A tree in Sardinia,Italy is claimed to be between 3 and 4 thousand years old and their are records of many trees dating back to the time of Christ.
The olive tree is amongst the oldest cultivated trees in the world. Grown before the written language originated.The Olive was native to Asia Minor and spread from Iran, Syria and Palestine to the rest of the Mediterranean over 6,000 years ago. It seems the ancients were well aware of olive oil benefits. Olives spread to the early Greeks and then to the Romans who took it with them as they expanded. As we can see curing olive is nothing new.
The Prophet of Islam, Muhammad, used to advise his followers to apply olive oil to their bodies, and himself used oil on his head. Maybe this is the origins of olive oil care and olive oil cosmetics today. During Baptism in the Christian church holy oil may often be our beloved olive oil.
Over the last few hundred years the olive has spread to North and South America, Japan, New Zealand and Australia.
Fossilized remains of the olive tree's ancestor have been found near Livorno, in Italy, dating from twenty million years ago.
Olive trees have an unbelievable tolreance to many climatic differences. They tolerate freezing cold, unbelievably hot summers, drought conditions and almost anything the climate can send it. Temperate climates are of course the ideal for these most tolerant of trees with a hot summer and rainy autumnal months.They grow well in rocky poor soil where little else would grow especially with no form of irrigation. The mediterranean countries of Spain and Italy are now the most prolific growers but Greece stiil grows enormous quantities.

If of course you don't have your own olive trees or fresh olives then there are some fantastic shops that supply them. One of my favourites is Sunfood Nutrition
Living in Catalonia i guess this is sacrilege but one of my favourite recipes for curing olive is actually from the Lebanon!
This is for Black Olives-
Slit each Olive down the side and cover with cold water for 17 days changing the water every day. This will eliminate bitterness.
Soak in salt water for 3 days stirring ocassionally. Drain.
Soak for 3 days in 1 part vinegar 2 parts water ensuring olives are always covered.
Drain and add garlic, pickling spice, chillies and thyme.Store in sterile jars covering the olives in oil.
After 4 weeks you are good to go. They are nice and tangy and the oil is FANTASTIC as a dressing as well.

Armando Manni's Tuscan oil is to say the least expensive! Olive oil benefits are real but i can't see many of us ever getting the opportunity to taste such an exclusive product.
By all accounts it is an unrivalled oil and many exclusive chefs swear by it. Manni the Italian movie direcor was inspired to create his own oil when he found it near impossible to trace the exact details of organic olive oil he wished to obtain for his young son. He collaborated with the Department of Pharmaceutical Science at the University of Florence and proceeded to make oil as if he were producing a fine wine.
The more i read the more i wish i could taste it but with a minimum order of a litre iguess that won't happen!
