Almond Cookies are often associated with Chinese food, though they are not originally from China. Almond Cookies are lighter and more delicately flavored than most cookies, and are a great change from the more traditional chocolate chip cookie. When it comes to holiday gatherings, work events or even just an evening at home, Almond Cookies are a great addition because Almond Cookies are budget-friendly, easy to make, take anywhere cookies that travel exceptionally well.

Almond Cookies

List Of Ingredients:


1 cup shortening
3/4 cup sugar
2 eggs
1 tablespoon almond extract
2 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup blanched almond halves
1 egg, beaten


Steps Needed To Make Almond Cookies:


Preheat the oven to 375°F. In a large bowl of electric mixer, cream together the shortening and sugar, then beat in the 2 eggs, one at a time, mixing well after each addition. Add the almond extract and mix well.

In a separate bowl, sift together the flour, baking soda, and salt. With a wooden spoon, gradually beat the flour mixture into the shortening mixture. The dough will be fairly firm. Divide the dough in half and roll each into a log, about 1 1/2-inch in diameter. Wrap in waxed paper and refrigerate the dough for at least 4 hours.

Slice the dough into 1/4-inch thick slices. Place cookies on an ungreased cookie sheet, then press an almond half into the top each cookie. With pastry brush lightly brush the cookies with the beaten egg. Bake for about 10 minutes, or until light golden brown in color. Remove cookies from cookie sheet to wire racks to cool completely.
