Cucumbers... They're Dill-icious Anytime!
Cucumbers originated in India and have been cultivated for more than 3,000 years, making them perhaps one of our oldest crops. The cucumber was even mentioned in the Bible! Today they are grown all over the world for pickling and the fresh produce market. Cucumbers do especially well in greenhouses, where one plant can produce between 20-30 pounds of fruit in a single season. When I had a larger garden I grew many types of cucumbers. They're excellent accompanied by other fruit-vegetables like tomato and avocado, lightly drizzled with olive oil and sprinkled with salt and pepper.

I love cucumbers: plain, pickled half-sours, and in cucumber slaw. Most kids in America eat PB&J sandwiches; but my mom "invented" peanut butter and cucumber on rye. Sounds off-the-wall, but it's salty, sweet, crunchy, and peanuty all at once.

I always grow cukes in my veggie garden. And I love the small pickling ones in salads. My family also loves pickles. I use them in the fresh Italian sandwiches I make. My kids prefer large sour pickles while I like the little ghergin ones.
