Pasteurization: A Fruitless Process

Fresh fruit and vegetable juices are nearly impossible to purchase in supermarkets now, due to the widespread use of pasteurization to control bacteria. The problem is, once the juice is pasteurized, most nutrients and all beneficial enzymes are destroyed. The highly acidic juices that result from this process also put a burden on the digestive system. The solution? A home juicer! Fresh juices made with organic produce are full of nutritional value. Once you taste freshly homemade juice, you'll never go back to overprocessed, highly sweetened, commercially produced juices again. Remember ... even organic produce may contain harmful residues. Be sure to wash your produce thoroughly before juicing. I use Environné Fruit & Vegetable Wash, which is available at our local Trader Joes.

Fruit and Vegetable Juice

Juice is a liquid naturally contained in fruit or vegetable tissue. Juice is prepared by mechanically squeezing or macerating fresh fruits or vegetables without the application of heat or solvents. For example, orange juice is the liquid extract of the fruit of the orange tree. Juice may be prepared in the home from fresh fruits and vegetables using variety of hand or electric juicers. Many commercial juices are filtered to remove fiber or pulp, but high pulp fresh orange juice is a popular beverage. Juice may be marketed in concentrate form, sometimes frozen, requiring the user to add water to reconstitute the liquid back to its "original state." However, concentrates generally have a noticeably different taste than their comparable "fresh-squeezed" versions. Other juices are reconstituted before packaging for retail sale. Common methods for preservation and processing of fruit juices include canning, pasteurization, freezing, evaporation and spray drying.

I'm a huge fan of Jack LaLanne. I grew up in the San Francisco Bay Area, where The Jack LaLanne Show was produced. Initially a local production that was expected to air for 6 weeks, the show lasted 34 years and was eventually carried on the entire ABC network. My grandmother and I would often exercise along with Jack.

I'm extremely happy with my Jack LaLanne Power Juicer. In addition to delicious and healthful juices, recipes are provided for muffins, breads, salsas, soups, and sorbets, using pulp that is extracted during the juicing process.

Sure, juicers are sometimes a pain to clean, but the plastic parts rinse off without a fuss. A brush is provided to clean the metal parts. And since there is very little fruit or vegetable peeling involved, you're really saving time!


Jack LaLanne remained committed to fitness until his passing at age 96 on January 23, 2011.

    I always assumed that the 'fresh' fruit juice in the supermarkets is actually fresh, but it seems that's not the case due to "widespread use of pasteurization" in juice making. An interesting lens.

    That power juicer looks nifty. My grandmother used to use a hand powered juicer on oranges to get that fresh taste. Having it fresh was completely different than buying it in the supermarket.

    I grew up with mostly frozen orange juice. I couldn't believe how great fresh squeezed juice tasted until (get this) I was in my 20's. Thanks for sharing more information, I'll have to check out the resources you mention.
