Amaretto Mousse Cheesecake is a modern-day recipe for the classic no-bake cheesecake on a graham cracker crumb base. Amaretto Mousse Cheesecake owes it super creamy texture to a cream cheese filling set with gelatin and lightened with whipped cream flavored with Amaretto liqueur. Amaretto Mousse Cheesecake is so simple to make, yet is very stylish (when garnished with chocolate sauce and berries) to serve to your special dinner guests. You'll leave them wondering how you found the time to make such an amazing dessert. But I won't tell if you don't. I hope you enjoy this recipe.

Amaretto Mousse Cheesecake

List of Ingredients:


2 cups graham cracker crumbs
1/2 cup butter or margarine, melted
1 envelope unflavored gelatin
1/2 cup cold water
3 packages (8 ounces each) cream cheese, softened
1 1/4 cup sugar
1 can (5 ounces) evaporated milk
1 teaspoon lemon juice
1/3 cup Amaretto liqueur*
1 teaspoon vanilla extract
3/4 cup whipping or heavy cream, whipped


Steps Needed to Make Amaretto Mousse Cheesecake:


With a spoon, combine the graham cracker crumbs with the butter. Press this mixture onto the bottom and up the sides of a 9-inch spring form pan; chill.

In a small saucepan, sprinkle the gelatin over 1/2 cup cold water. Let stand for 1 minute. Over low heat, stir until gelatin is completely dissolved, about 3 minutes; set aside.

In the large bowl of an electric mixer, beat the cream cheese with the sugar at medium-high speed until creamy, about 2 minutes. Gradually add the evaporated milk and lemon juice; continue beating at medium-high speed, until mixture is very light and fluffy, about 2 minutes. Gradually beat in the gelatin mixture, the liqueur and vanilla until thoroughly blended. Fold in the whipped cream. Pour this mixture into the prepared crust; chill 8 hours or overnight. Garnish with dark chocolate sauce and berries, if desired.

*Substitution: Omit Amaretto liqueur. Increase water to 3/4 cup, and add 1/2 teaspoon almond extract with the vanilla extract.

Dark Chocolate Sauce

1 1/2 cups heavy cream
2/3 cup dark brown sugar, packed
4 ounces bittersweet chocolate, chopped
3 ounces unsweetened chocolate, chopped
1/4 cup unsalted butter, softened
3 tablespoons Amaretto liqueur, or to taste


Steps Needed to Make Dark Chocolate Sauce:


In small, heavy saucepan, combine both the heavy cream and brown sugar. Bring mixture to a boil over medium-high heat, whisking occasionally until sugar is dissolved. Remove pan from heat and add both chocolates, whisking until they are melted. Whisk in the butter and the Amaretto. Continue whisking until sauce is smooth. Let cool slightly.
