Cupcakes Are Just Plain Amazing
I made a ton of cupcakes when my two were in school. Frankly it was easier to bake a batch of cupcakes, frost them and then package them up for their lunches. And then they grew up and I thought that my cupcake making days were over. That was until I moved to Chicago! Cupcakes are EVERYWHERE and some of them you don't even get to eat! Like the one in the photo! Looks like you should be able to eat it right? This particular one you drop in your bath!

Hummingbird Cupcakes
3 cups of flour1 tsp baking soda
1/2 tsp salt
2 cups sugar
1 tsp ground cinnamon
3 large eggs
3/4 cup oil
1 1/2 tsp vanilla
1 8oz can crushed pineapple (undrained)
1 cup chopped pecans
1 3/4 c mashed bananas
1. Combine dry ingredients (sifting) into a bowl and then add all of the wet ingredients until you get to the crushed pineapple. That's the next step. Stir to combine both the wet and the dry.
2. Now add the pineapple, the nuts and the bananas.
3. Pour into paper filled muffin cups and bake at 350 degrees for about 23 minutes. Use a strand of uncooked spaghetti to check for doneness.
Frost with your favorite frosting... we like cream cheese flavor which can be made from scratch if you have tons of time on your hands lol. Mine comes out of a can!
