Amish Breakfast Recipes with Eggs

The Amish women I know, like my grandmother, raise their own free-range chickens, and get a regular supply of super-fresh eggs.  While it is difficult to get tired of eggs, it is  useful to have lots of ways to use them, and so teach kids how good many foods can be.

All of the recipes, though perhaps similar to others, are actually in use by home farmers, and all use home grown vegetables, meats, homemade sausages and of course, farm fresh cream, butter and cheeses.   

Breakfast Egg Sandwiches

Homemade bread and cheese really makes it!

According to the number of people, you may need to adjust the amounts.

4 slices of fresh homemade bread
12 slices of really good bacon
1 sm onion, chopped
1 sm can mushrooms, chopped
grated Amish butter cheese, cheddar, lacy swiss (or you can use parmesan)
4 fresh eggs

Cook the sliced bacon in large skillet. When done to a crispy state, remove slices and set aside. Saute onion and mushrooms in the bacon grease, and when onions are clear, remove with slotted spoon and set aside.

In a bowl, scramble eggs with cream or half and half, salt and pepper to taste. Add onions and mushrooms and cook.

Brown the slices of bread in the remaining bacon grease on both sides until toasty and place on a cookie sheet.

When eggs are scrambled, put bacon slices on each piece of bread, divide scrambled eggs into four equal parts and put on the bread slices. Cover the top with the cheese and broil until cheese is melted and deliciously browned.

Variations: I like to add some red or green peppers with the onions, and spices to taste, such as cayenne, paprika, stone ground mustard. I also like to add some cheese to the scrambled eggs, and still top the sandwiches with cheese and broil.
