Fire Up Your Party With These Tex-Mex Snacks
This has always been a popular treat around our house during the fall and winter. It's also our most requested snack at Super Bowl parties. If you like hot and spicy, then this recipe is for you.
Prep time: approx. 15-20 minutes
The Ingredients
- 2 lbs. ground sausage (we use Jimmy Dean HOT)- 1 26 oz. can of whole jalapeños
- 1 lb. of shredded cheese (a mixture of cheddar and
mozzarella is nice)
- About 2-3 eggs
- 1 can of seasoned breadcrumbs
- 1 box of bisquik
Putting It All Together
Mix sausage, bisquik and a small handful of cheese in a large bowl until well blended. Set aside.
Beat eggs in a small bowl. Open can of bread crumbs and put this in another bowl. Set both of these aside as well.
Open can of peppers and slit open each one. Remove seeds until peppers are hollow. Fill jalapeños with the rest of the cheese.
Flatten out small patties of sausage and wrap each stuffed pepper, making sure that it's completely surrounded with no openings. Roll in beaten eggs and then in the breadcrumbs, coating completely.
Place Armadillo Eggs on to baking sheet and bake at 350 degrees. Eggs are done when breadcrumbs are browned and sausage is no longer pink. This usually takes about 20 - 30 minutes.
Most of the time we cut them in half to give them a more "egg-like" appearance and to double the amount of snacks. Grab a bottle of beer and enjoy!
