Asian bamboo shoot salad recipe
How to make traditional Asian bamboo shoot salad
- Serves: about 4

Ingredients
- 1-2 cloves of garlic
- 2 tbsp fish sauce
- 1 small shallot
- 2 tbsp lime juice
- 2 red chilli
- thinly sliced
- 1 lbs bamboo shoot
- toasted sesame seed
- 1 spring onion
- thinly sliced
- 1/2 cup cilantro leaves
Instructions
Use a dry frying pand and char the garlic and shallot until it's changing color. Set aside to cool and then chop them finely.
In a mixing bowl, put fish sauce, garlic, shallot, lime juice and chili. Cover and let them about 15 minutes to develop the flavor.
If you are using fresh bamboo shoot, boil the shoot for about 15 minutes in large quantity of If you are using bamboo shoot in can, drain it and blanch it for about 2 minutes. Slice the shoot thinly lengthwise.
Add green onion, spring onion and bamboo shoot to the bowl. Toss them to coat with dressing. Transfer this mixture into salad platter and garnish with toasted sesame seeds.
