Sea ice floats because it is less dense in the solid phase than it is in the liquid phase. If sea ice were MORE dense in the solid phase, it would sink to the bottom of the ocean (light things can't carry heavy things too well, right? Sinking, dense ice would cause the oceans to freeze to their beds, so animals and plants which live on the ocean floor would die!

Sea ice is about as salty as the ice in your refrigerator! Although sea ice is made from salty sea water, the salt molecules are rejected back into the liquid as ice forms. There isn't much room for salt molecules to be trapped in the close-knit structure of sea ice.

A self-professed "pagophile" ("lover of ice"), Gosnell exhausts the matter of frozen water. This book is just plan amazing. One would think that no one could write a 560 page book on frozen water and make it not only interesting, but fascinating. I found myself turning the pages and reading despite myself. Mariana Gossnell has a style that leads one on from wonder to wonder. Indeed "Ice: The Nature, the History, and the Uses of an Astonishing Substance" is a masterpiece of science writing.

The breadth and depth of information covered in the space of so few pages is astounding and yet the author doesn't skimp on details. Should appeal to a wide and educated audience.

20 years of research into the whole history of ice and ice-making, and this book, which she died before completing (it has been finished by Jill Norman). As revealed in extracts from the earliest writings on the subject, ice, before the days of refrigeration, was an item prized by the mightiest and warmest empires. Though not a cookbook, this encyclopedic treatise on ice won a 1995 Julia Child Cookbook Award for Literary Food Writing, and a Jane Grigson Award.

Ice Harvesting 

The ice harvesting process was labor intensive, requiring 20-100 men for one to four weeks. It was necessary first to scrape the snow off ice that was six to thirty inches thick. Then men measured grids on the ice of cutting ice from the river and horses pulled a tool that cut grooves on the grid, usually at 22" x 32" to 44" square. The next step was to cut through the grooves until the blocks broke off and float them down the cleared channel to the chute, where they were hauled up and into the ice house.

Blue ice occurs when snow falls on a glacier, is compressed, and becomes part of a glacier. During its travels, all of the air bubbles that are trapped in the ice are squeezed out, and the size of the ice crystals increases, making it clear. The ice is blue for the same reason water is blue. Namely, it is a result of an overtone of a OH molecular stretch in the water which absorbs light at the red end of the visible spectrum.

Ice is a solid phase, usually crystalline, of a non-metallic substance that is liquid or gas at room temperature, such as water, carbon dioxide ice (dry ice), ammonia ice, or methane ice.
