Very nice. You didn't answer why Atkins improves cholesterol. I think that is partly because we don't really know. I look at it like this: they used to think milk caused kidney stones that are made of calcium. Now they are finding out calcium is good for them. Kind of like how if you are never exposed to germs you are more likely to get sick. Our body isn't as sensitive towards things like cholesterol if we eat it, maybe?
