Low Carbohydrate Recipes for Weight Loss

Weight Loss is one of the hardest skills to conquer these days with all the fried snacks and fast food restaurants out there. With trans fats, processed foods, and preservatives...not to mention hodrogenated oils and corn syrup (which IS bad for you no matter what they say) it is no wonder we are an obese nation. Carbohydrates contribute largely to the obesity problem that is consistently rising in the United States and other parts of the world are following close behind. A collection of low carb recipes is a beneficial tool that a low carber can't do without! It is important to eat throughout the day, a series of almost constant small snacks and meals is ideal. If you go too long without there will be two problems. First of all, your metabolism will go into starvation mode. This means it will slow down and, because it thinks you are starving, it will hold on to all your fat as your metabolism is trying to help you survive. It is better to trick your metabolism so it can get used to you eating, and become more adaptable. The other reason that you don't want to go too long without eating is because if you get too hungry your chances of craving and eating carbohydrates are greatly increased. And we all know what happens after that.
SPICY Low Carb Chili Recipe

2 lbs lean ground beef
4 spicy smoked sausages, chopped small (I like lousiana sausages and keilbasa)
1 tbls olive oil
2 cups beef broth
1 fresh jalapeno, diced
1 fresh serrano, diced
1 tbls cayenne
3 cloves crushed garlic
1 tsp crushed red pepper flakes
1 tbls paprika
1 tsp salt
Optional:
shredded cheddar
sour cream
chopped green or white onions
1. Heat olive oil in a large pot, add crushed garlic
2. Add ground beef, cook until barely browned, constantly stirring
3. Add ALL of the rest of the ingredients,
stir, and heat on low for at least 1/2 hour
4. Top with garnish of choice
Ceasar Salad Dressing

1 raw egg, beaten
1 Tablespoon black pepper
2 1/2 Tablespoons anchovy paste
1 Tablespoon mayo
1/4 cup sour cream
1/4 cup Parmesan
1/4 cup olive oil
Servings: 6
Mix ingredients together with an immersion blender or an electric mixer. Serve or refrigerate immediately
Pan Fried Salmon

Fish of your choice, 2 filets
1 tbs paprika
2 tsp garlic
1 tbs salt
1 tsp pepper
1 tsp cayenne pepper
Heat oil in a pan on medium high heat
Add fish once the oil is hot
make a mixture of paprika, cayenne,salt and pepper
add to fish and turn to cook fish on side with spices
turn heat to low once fish is brown on at least one side
Add soy sauce, lemon sauce, and slices of lemon to the pan turning down to low and simmering until fully cooked
3 Cheese Cordon Bleu

Ingredients:
4 thick slices of ham
4 chicken breasts
4 slices of mozzerella
4 slices of swiss
4 oz of feta
1/2 cup white wine
1 tbls worcestershire
1/2 tsp paprika
1 cup baby spinach
1 tbls brown mustard
4 tbls olive oil
1. Pound chicken breasts to 1/2 inch thin
2. Add a slice of ham on each chicken breast
3. Preheat oven to 350 degrees
4. Heat oil in a frying pan
5. Once the oil is hot, carefully add the chicken breast
6. Cook on ONE SIDE while the ham is on top, until chicken is brown on the bottom
7. Remove chicken from the frying pan half cooked, and add to a rectangular baking dish
8. Top the chicken breast with feta and baby spinach, then swiss and mozzerella
9. Add white wine, worcestershire, and mustard to the oil the chicken was cooked in.
10. Heat and stir until thouroughly mixed
11. Top chicken with white wine mixture
12. Sprinkle paprika on top of the cheese and heat in the oven for 45 minutes. The juices should run clear, signaling the chicken is done and the cheese should be melted and browned in parts.

Broccoli - Cauliflower Salad

Ingredients:
1/2 a head of califlower
1 large bunch of brocoli
1 16 oz bottle of ranch dressing
1/4 cup of bacon bits( hormel real bits has no carbs)
1/2 cup of chedder cheese
mix together in a large bowl.
Low Carb Chicken Kabobs

Chicken Thighs
Mix together
1/4 cup soy sauce
2 tbs worcestershire
1 tbs paprika
2 tbs crushed garlic
spread on chicken and heat oil in a pan on the stove
sear quickly,
browning the chicken but not cooking through,
and put it on the kabob skewer
heat the oven on broil for 2 minutes with the kabobs in there
continue heating at 350 degrees for 15 minutes or until cooked through
Steak Rub

1 Tbls black pepper
1/2 Tbls salt
2 Tbls Paprika
1/2 Tsp Cayenne Pepper
3 Tbls Olive oil
1 Tbls garlic powder
1 Tbls basil, dried
1 Tsp liquid smoke
Mix together with a basting brush. Poke holes in the top of the meat with a fork and baste on the rub, making sure to rub it in well. Cook as desired.
Key Lime Cheesecake

2 8oz packages of cream cheese, softened
1 package key lime jello
1/2 cup boiling water
1 tsp coconut extract
1/2 cup coconut, unsweetened
2 tbs coconut oil
2 cups splenda
1 cup sour cream (optional)
Mix jello powder first with the boiling water, then with the cream cheese that is softened. Add all the rest of the ingredients and cream together. Leave in the refridgerator to set. Ready in three hours.

Chocolate chocolate Chip Cheesecake

3 cream cheese 8oz containers, softened
1 cup splenda
1 cup sugar free chocolate chips
3 tbls cocoa powder
1 cup sour cream
1 tbls vanilla
Preheat oven to 350 degrees
Mix together all ingredients except chips with electric mixer and add chocolate chips when done
bake 35 minutes or until it solidifies
chill for at least 4 hours,
serve with whipped cream and chocolate syrup
Low Carb Stuffed Mushrooms

4oz can tiny shrimp, chopped
8oz cream cheese
1/2 cup green onions
4oz can cooked clams
24 mushrooms, whole
1/2 cup shredded Parmesan cheese
Preheat oven to 350. Mix ingrediants together (except mushrooms and shredded pamesan) and take out the stems of the mushrooms. Stuff them and top with parmesan. Bake at 350 degrees for 20 minutes
