Atole - A Delicious Mexican Beverage

Atole as corn gruel may sound strange - but it is wonderfully delicious when prepared right.
Atole is easy to make and delicious to drink. Some call atole a corn gruel, but by adding sweetener and cinnamon it can be a most delicious beverage. Try it - you'll probably like it! Lots of Mexicans do!
Some people are confused by the requirement for corn flour, or masa. This is NOT corn starch. It is NOT corn meal. Masa is a corn flour used in Mexican cooking to make atole, tamales, and other delicious treats.

How to make Atole corn gruel
...something like oatmeal for breakfast...
Ingredients
- 3 cups water to boil
- 1 teaspoon salt
- 3/4 cup blue corn meal finely ground or masa toasted to light brown
- 1/4 to 1/2 cup cold water
Instructions
Boil the water with the salt. In a bowl add cold water to the masa until it is moistened (up to 1/2 cup). Add the hot water with salt and stir until smooth. Cook over a medium heat for about ten minutes. You can serve this for breakfast with a bit of milk or vegan milk substitute. Or . . . you could serve it as a side dish with your dinner.
Blue corn meal

Ingredients
- 1 cup masa
- 10 cups water
- 2 tablespoons vanilla extract
- 2 tablespoons cinnamon
- 10 tablespoons piloncillo
Instructions
Note: The piloncillo is a brown sugar cone used in Mexican cooking. It can be replaced by brown sugar.
Place the masa, cinnamon, and piloncillo in a blender with enough of the water to fill the blender close to the top. When blended, transfer this mixture to a large cooking pot or dutch oven and stir in the rest of the water as it comes to a boil. When it reaches a good boil, turn the heat to low and stir constantly for about five minutes. Remove it from the heat, stir in the vanilla, and serve.

There are many variations of atole. Atole with chocolate is popular, and perfect with breakfast, or late at night before bedtime.

- I have never had this before, but it sounds interesting. I have seen Masa in the tiendas around my neighborhood.
