Mighty Tasty Aunt Helen's Manhattan Clam Chowder

Manhattan Clam Chowder is a traditional soup that includes clams, tomatoes, herbs and other vegetables. Manhattan Clam Chowder is lighter in comparison than that of the New England Clam Chowder version, so it is a good alternative to watching fat and calories. The main difference is that Manhattan Clam Chowder is always made with a tomato based soup and New England Clam Chowder is made with a milk or cream base. Aunt Helen's Manhattan Clam Chowder is very easy to make and delicious when well prepared. The best Manhattan Clam Chowder recipe is one that is made with a minimal list of ingredients.

Serves 4 to 6

6 slices bacon, diced
1 large onion, chopped
2 large potatoes, diced
1 bottle (8 ounces) clam juice
20 fresh clams or 2 cans (8 ounces each) minced clams
1 pound tomatoes, peeled and coarsely chopped
1 teaspoon salt
freshly ground black pepper

I've owned this book for quite some time. It is one of my favorites out of all my cookbooks.
I love how so many recipes have a sweet little family story to go with it. I love how nothing in here is complicated. I love how it encourages me to make my own vinegars and cheese and sausage. I love how it tells me what I can make from foraged items in the wild, should the need arise. I love how it has recipes for homemade cleaning products and beauty aids.
